NAGALAND CUISINE

Geography
•Population :
19,80,602 (2014)

•Its capital city is Kohima and its


largest city is Dimapur.

•It has an area of 16,579 square


kilometers.

•'naga', meaning "people with


earrings.
History
•Nagaland, the land of the hospitable and warm Nagas, lies in the corner of
India's North-East-bordering Myanmar.

•Historically, the Nagas have always been brave warriors. They consider the
safety and security of their guests as an honor and prestige and will never
allow any harm to be done to any of their.

•Topographically, Nagaland is mostly a hilly region with a pleasant and


salubrious climate throughout the year, except for a small region inthe
foothills.

•Nagas are by race of the Mongoloid stock and speak Tibeto Burman group of
languages. But English and Hindi are widely spokenand language is no
problem in Nagaland.
Climate
•Nagaland has a largely monsoon climate with high humidity levels. Annual
rainfall averages around 70-100 inches concentrated in the months of May to
September. Temperatures range from 70 °F (21 °C) to 104 °F (40 °C). In winter,
temperatures do not generally drop below 39 °F (4 °C), but frost is common at
high elevations.

•The state enjoys a salubrious climate. Summer is the shortest season in the
state that lasts for only a few months. The temperature during the summer
season remains between 16 ° C (61 °F) to 31 °C (88 °F). Winter makes an early
arrival and bitter cold and dry weather strikes certain regions of the state. The
maximum average temperature recorded in the winter season is 24 °C (75 °F).
Strong north-west winds blow across the state during the months of February
and March
Special Equipment
•Indigenous tools like hand saw (used mainly for carpentry purpose), Naga
dao, cutlery etc. put up for sale during Hornbill festival in Nagaland.

•Hornbill Festival was launched by the Government of Nagaland in December


2000 to encourage inter-tribal interaction and to promote cultural heritage of
the state. Organized by the State Tourism Department and Art & Culture
Department.

•The forests of Nagaland are rich in bamboo and cane. Thus, naturally they
are expert basket makers.

• In Nagaland, the bamboo pipe is popular. In general, it has been rightly said
that Nagas start life “ in a cradle of bamboo and ends in a coffin of bamboo”.

Staple Diet
1. RICE : The Konyak Naga tribesmen of
Mon district have folktales to
believe that the rice as a crop was given
to them by traditional animist deities.
The major crops Nagas produced traditionally
were however millet, rice and yam.

2. Bamboo shoot: Bamboo shoot is a special


ingredient given into almost
all Naga dishes. ‘Bashtenga (local name for Bamboo
shoot) and Pork dishes by Lotha Nagas – inhabitant
of Wokha district is most popular.
3. GREEN VEGETABLES : The food plate is
always accompanied
by a bowl full of seasonal green vegetables and
leafs. It is true that the Nagas up to this era have
a good knowledge of what is edible and nutritious.

4. AKHUNI : it is perhaps the most commonly


used fermented product of
Nagaland. It is prepared year-around from
soyabeans by people of all tribes It is also a
protein-rich legume in an otherwise traditionally protein sparse diet.
CUISINE
1. Galho : Galho is a soupy mixture of rice,
vegetables, or meat similar to a
North Indian Khichdi. This dish is mostly prepared
with a variety of seasonal greens flavored with
smoked pork. It is garnished with ginger and garlic. 

2. SAMATHU: Samathu is the dish famous in


the districts of Nagaland prepared
by using smoked pork and thick curry. It is signature
dish of Nagaland loved by all tribal people. it is made
into a thick curry with the use of a chilly powder
called Samanthu which is a vital part of the dish making it more gravy like
and most importantly spicy. 
3. ZUTHO : Zutho is a famous rice
beer that is made all
over the North East especially famous
in Nagaland and is the main source of
enjoyment for the people.

4. BUSHMEAT : One of the favourite


dishes of the Naga
people is the Bushmeat or dog meat.
 It is considered to be very delicious by the
Naga people. The Bazaar in Dimapur is like
heaven to all the people as things are sold for cheap
