Why do you think it’s
a must to handle food
properly? How do we practice
proper food handling?
Hygienic handling of food to prevent food contamination

 Foods that are not stored well get spoiled easily,


especially in hot and humid climate.
 Food may be contaminated and spoiled because of the presence
of microorganism which is called food contamination.
 Contaminated food, when eaten, can lead to food poisoning and
digestive orders.
 Sanitation is keeping things clean and free of harmful levels of
contamination. It is also maintaining conditions favorable
to good health.
Preventive measures to prevent food contamination
 
 Maintaining personal cleanliness and wearing
proper cooking outfit
 Working in a clean kitchen and using clean and
sanitized equipment.
 Preparing and serving food hygienically.
 Cooking food thoroughly
 Keeping food covered, at all times.

Food Processing –is the trasformation of
raw ingredients by physical or chemical
means into food, or of food into others.
  
Food Preservation –refers to a technique
the preserve food from spoiling, easily.-

Air drying is a process of


decreasing the amount of steam
in the air using appropriate methods.
  
Air-drying

The humidity can be directly removed


from the air by:
Lowering the air temperature below the 
dew point, which makes the water
condense. That’s why this is called the 
condensation method.
   The following methods of air drying are used in
practice
Heating and ventilation - is the most common
method, but it is inefficient and uneconomical.
Condensation drying - makes the steam in the
air condense. It is more efficient and economical
than heating and ventilation.

Sorption drying (adsorption and absorptions)


removes the water from the air by absorbing it.
This method is the most efficient.
   Dew point - a temperature at which water drops condense in the air at specified
initial temperature and humidity. When the air is 100% saturated, it is not able to
absorb any more water, and further lowering of the temperature will make the
water condense on surfaces that have a temperature close to the one causing 100%
saturation.

Steam condensation - a transformation of water steam in the air from the gaseous
to the liquid state (condensation) or solid state (freezing, sublimation).

Pickling
  
Pickling is defined as the process of
preserving a food by either anaerobic
fermentation in brine or immersion
in vinegar. The resulting food is called
a pickle.
  
Sauerkraut -
  
1. Choose your Produce – your fruits or
veggies should
fresh clean and ripe. Ensure your selection
doesn’t have any blemishes, wormholes, or
bruises. Only the best will do for your
sundried food. 
  

2. Wash the produce thoroughly


Try your best to get all dirt, debris,
and bugs off your chosen harvest.
  
3. Cut and Remove Pits and Seeds
Smaller produce can be left whole, but for
large items like tomatoes, you should cut
the fruit into smaller pieces. A whole tomato
would just rot in the sun, as they often do
at the end of the harvest. 
  
1. You’ll need to be sure that you have
bananas, a rack to dry them on, and some
lemon juice. Next, you’ll need to peel the
bananas from their skins as they are not
what we are after here.
