INTRODUCTION

The food industry plays a vital role in our daily lives, transforming raw

ingredients into a vast array of consumable products. This dynamic sector encompasses

everything from fresh produce to processed foods, catering to diverse consumer needs

and preferences. Recognizing the increasing demand for convenient and flavorful snacks,

we have chosen to focus on fruit-based treats, specifically pastillas. The food industry

itself is a thriving ecosystem, inspiring countless entrepreneurs with its potential for

innovation and creativity. By leveraging the popularity of fruit-based snacks, we aim to

capitalize on this dynamic market.

Originated in the town of San Miguel, Bulacan, Philippines, pastillas are actually

known as pastillas de leche. These derive their names from the Spanish words pastillas or

pills and leche which is milk .Pastillas are a type of milk-based candy, which are part of

the Filipino food culture. The original recipe used fresh carabao's milk, sugar, and citrus

zest. Today, pastillas are more commonly made with a combination of cow milk,

condensed milk, sugar, and/or powdered milk.

This milky treat tend to get overlooked .by many individuals ,as it is seen as an

ordinary snack that tend to get too sweet as a result it becomes distasteful. However, with

the right approach to flavor balance and innovative presentations, pastillas can be

transformed into a gourmet experience that appeals to a wider audience. Pastillas can be

elevated beyond the traditional form by introducing unique flavors or local ingredients
