SBA 1 Recipes

- Fresh fruits served in a creative way

Flower Bouquet

Ingredients:

2 cups Pineapple
2 Oranges
2 cups Watermelon

Instructions:

1. Firstly, for the fruit bouquet, wash all the fruits and peel and remove skin of necessary
fruits.

2. Cut fruit:
Pineapple - remove the inside core and cut into rings. Using the heart and star shaped cookie
cutters cut out pieces from the pineapple.

Watermelon - Cut a thick piece of the watermelon into a triangle and place into the base of
the plastic box. After cut the watermelon into slices and using the heart and star cookie cutter
and a melon baller make the shapes.

Orange - Cut the orange into wedges.

3. Fruit assembly:
- Place the watermelon triangle at the base of the box.

- Cut the skewers into different heights and then thread the fruits onto them in different
bbbpatterns.

- Place all the skewers onto the triangle piece of watermelon.

- Place the box on a plate and serve.


- Protein Dish

Chickpea and Avocado Spread

Ingredients:

1 can chickpeas (Convenience Food)


1 ripe avocado,
1/4 cup tomatoes, diced
1/4 cup onion, finely chopped
1/3 cup fresh cilantro or parsley, chopped
Juice of 1 lemon
1 tablespoon sourcream
Salt and pepper to taste
Garnish : Parsley

Instructions:

1. Firstly drain the chickpeas.

2. Then peel the avocado and remove all excess water from it and chop it up.

3. Combine Ingredients: In a larger bowl, add the chickpeas and avocado then smash them,
and mix in the onions, sour cream and fresh herbs and mash them all together again , then add
the tomatoes at last.

4. Lastly, serve.
- A fortified Quick Bread Item

Savoury Pancakes

Ingredients:

1/2 cup oat flour


2 tbsp wheat flour
1/4 cup cucumber , finely shredded
1/4 cup carrots , finely shredded
1/4 cup onions , finely chopped
2 tbsp fresh cilantro , finely chopped
2 cloves garlic , minced
1/2 teaspoon fresh ginger , grated
1/2 cup water
1/4 teaspoon baking soda
1/4 teaspoon baking powder
2.5 teaspoon fresh lemon juice
1/2 teaspoon salt
Olive oil
Garnish: Parsley

Instructions:

1. Whisk together the oat flour and wheat flour.

2. Add all the other ingredients in the order listed above.

3. Taste the batter and adjust for lemon or salt if needed.

4. Heat a pan on medium-low heat.

5. Wipe the pan clean quickly with a slightly damp napkin.

6. Brush a tiny bit of olive oil on the pan where the batter will be poured.

7. Using a spoon, pour a small amount of batter in the pan.

8. Cook for a few minutes until the bottom side is golden brown and slightly crispy.

9. Flip each mini pancake, adding oil to the other side. Cook until slightly golden brown.

10. Cool on a cooling rack and serve.


- A hot beverage using the appropriate equipment

Hot Chocolate

Ingredients:

¼ cup grated cacao


3 cups of milk
3 tablespoons sugar
2 Bay Leaves
2 Stick of cinnamon

Instructions:

1. Grate the cacao ball into a fine powder.

2. In a small saucepan, heat the milk,bay leaves and stick of cinnamon over medium heat
until it starts to steam. Do not let it boil.

3. Add the grated cacao to the saucepan and whisk continuously until the cacao has melted
completely and the mixture is smooth.

4. Then stir in the sugar and continue to whisk the mixture over medium heat for another 1-3
minutes.

5. Remove the saucepan from the heat and strain the hot chocolate several times until most of
the cacao powder is filtered out.

6. Remove the saucepan from the heat, strain and pour the hot chocolate into mugs.
