Plant/Farm Description and Location

The Salted Egg Production Facility, located in Barangay Calabalabaan, Science City
of Muñoz, Nueva Ecija, is designed to support the livelihoods of low-income families by
providing a sustainable income source through salted egg production. The 2-hectare site
offers ample space for production, storage, and administrative functions, as well as room for
potential expansion in the future.

The climate in the Science City of Muñoz, which is tropical, is perfect for the brining and
curing of salted eggs. The land is flat, making it easy to set up and transport materials.
Although the type of soil is not important for this project, the wide, open space ensures the
facility can run smoothly without space problems.

The production facility spans 100 square meters, thoughtfully designed to maximize
productivity. It includes a brining and curing area, a packaging station, a dedicated storage
room for raw materials and finished products, and an office space for administrative tasks. A
common restroom is also provided for staff convenience.

The salted eggs are packaged using paper pulp-made egg trays, an innovative, eco-
friendly, and cost-effective packaging solution that ensures the safety, quality, and
presentation of the product. These trays are crafted from recycled materials, making them not
only practical but also aligned with environmental sustainability goals. Their primary
function is to securely hold and protect the eggs throughout storage, transportation, and
display, ensuring the product reaches consumers in good condition.

Production Process

In salted egg production in Nueva Ecija involves a strict production process to ensure
high-quality and marketable products. Each step in the production of salted eggs requires
careful attention to detail to achieve the desired flavor, texture, and shelf life.

The process begins with cleaning and sanitizing the duck eggs. The eggs are thoroughly
washed to remove dirt and impurities, ensuring that the shells are clean and free from
contaminants. This step is important to maintain hygiene and prevent spoilage during the
curing process. Once cleaned, the eggs undergo brining, the core step in salted egg
production. A brine solution is prepared using water, salt, and clay, mixed in precise
proportions to create an ideal curing environment. The cleaned eggs are then carefully
submerged in the solution and left to cure for 14 to 21 days, depending on the desired level of
saltiness. During this period, the brine gradually infuses into the egg, enhancing its flavor and
preserving it for longer storage. After the curing period, the eggs are removed from the brine
and rinsed to remove any excess solution. The next step is coloring, where the eggs are dyed
with food-grade red dye. This not only adds visual appeal but also follows the traditional
presentation of salted eggs in the Philippines. The dyed eggs are then allowed to dry before
proceeding to packaging. They are carefully packed in food-grade, eco-friendly cartons and
labeled with the production and expiration dates. Proper packaging ensures the product's
freshness and quality, and making it more appealing and safe for consumers.

Waste Disposal System

Wastes are produced in all types of poultry operations. After poultry houses are cleaned
and sanitized, the wastes should be confined in one area for later removal by specialized
companies for composting or proper disposal to avoid contaminating the environment. This
confinement area can be used for all types of wastes including litter from most poultry farms
and un-hatched eggs from hatcheries.
