Brief
You have been asked to prepare a two-course meal from a
country of your choice. Before you can do this you must do some
research!
Why have you chosen foods from Traditional style of cooking.
• How is the food traditionally prepared, cooked or
around the world? served?
• What makes it so special or different to any other
country?
Regional foods-
• Does the food differ around the country? How?
• Is there a North and South divide?
Seasonal foods and typical ingredients used.
• What foods grow in each seasons? Spring, summer,
autumn, winter.
• What ingredients are typically used in your country and
why?
Questionnaire results.
Find menu’s and existing products relating to your country. • What did you find out from your questionnaire?
• Did you find out anything new or unusual about your
country?
• Research
• How is ‘International Cuisine’ defined? (flavours? Textures? Cultures?)
• What influences the cuisines (or cookery) of particular countries? (history of country/types of food
served/tradition)
• Who or what promotes or affects international cuisine? (Celebrity chefs/festivals/holidays)
• What is the customer demand in the UK for international food (ethnic groups
who live in the UK, international travel, speed of importing goods)?
• Explain the impact that international cuisines have had in your area (range of
food outlets, food ranges in supermarkets).
• Investigate the quality and range of manufactured international food available
to the caterer. (Menu’s/flyers/supermarkets)
