Fill the cavity with onion, garlic, thyme and lemon haves.
Rub the butter mixture on the outside of the turkey and season with black

in a blender.

Spread ¾ of the mixture in the center, leaving 1-inch border from both sides.
Roll the short side to seal the spice mixture and with a kitchen string, tie at
many places to form a football like shape.

hours.
Preheat the charcoal grill to medium heat. Grease the grill grate.
Move the coals to one side.
Place the lamb over unheated side of grill rack.

desired doneness.
Remove the lamb from grill and place onto a cutting board for about 10-20
