Introduction
Are you a lover of Chinese cuisines or you are a Chinese but not yet
confident of your dumpling-making job? Here is your chance to try 30
dumpling recipes that will not only pop a smile of satisfaction and filling on
people’s faces but will drop an angel of luck as they all start the new year.
1. Cilantro steamed dumpling
Cilantros have never been this delicious and if you doubt this, try a steamed
wrapped dumpling of luck.
Ingredients
Pre-starters
3tsps. Dry instant yeast
1 cup white flour
1 ¼ tbsp. sugar
1 cup of water
Instructions
In a small bowl, mix all the starter ingredients together and stand it for 35
minutes or till the content foams
In another bowl, fold in the starter mixture with the dough ingredients in
succession till a firm sturdy dough forms
Knead the sturdy dough on a fairly floured surface. Add more flour if the
dough is sticky and keep kneading till it gets a little stretchy.
Place dough in a lightly greased bowl, cover with a cloth or napkin, and
allow to rise for 3 to 4 hours
While waiting for the dough, make your filling now
In a medium-size bowl, combine the pork, scallions, cilantro, ginger
powder, 1tbsp. white vinegar, 1 tbsp. soy sauce, and 1 tsp. sesame oil. Mix
properly and set aside
Your sauce
In a saucepan, combine the remaining soy sauce, sesame oil, 1 tbsp. white
vinegar, 1 ½ tsp chili garlic sauce. Sauté under low heat for 1 minute, turn
off the heat and leave for cooling.
Get back to your risen dough, pouch it down and cut into balls
Work it with your hands to make a well
Scoop a spoonful of the filling into each wrap and make a twist at the edge
to seal.
Place the wrapped pockets in a bamboo steamer, taking care to keep each
apart so they don’t stick together. Cook for 20 minutes and leave for 10
minutes to cool out.
Serve with sauce

2. Chinese vegetable dumpling of luck
For anyone who wishes for the good luck recipes, this Chinese vegetable
dumpling of luck is here for you.
Ingredients
17 round dumpling wrappers
2 cups coleslaw mix
6 chopped scallions
2 tbsp. sesame oil
3 tbsp. soy sauce
1 ½ cups bean sprouts, chopped
1 tbsp. grated ginger
Instructions
Chop the ingredients
In a large bowl, combine the scallions, bean sprouts, coleslaw mix, sesame
oil, soy sauce, and ginger. Mix it properly and leave to sit for 2 minutes
Over medium heat, place a large nonstick skillet and toss in the mixed
contents.
Sauté for 2 minutes, remove from the heat, and leave for cooling.
Work a wrapper at a time, scoop a spoonful of the filling into the wrapper
Moisten the edges and clap them together for a seal. You can also use a fork
to make some patterns on the edges if you love fancy.
Prepare your steaming pot and place the dumplings into the pan leaving
each apart to prevent sticking together. Cook for 10 to 12 minutes

3. Chinese lemon potstickers
Lemons have been saving the health of many since the world began and
introducing it into dumplings is an addition to good luck. So, when you are
thinking of a healthy, unique, and easy dumpling recipe for the new year,
let’s try this.
Ingredients
1 of cup water
2 lb. chicken
4 green onions, nicely chopped
2 tbsp. freshly squeezed lemon juice
1 tbsp. zest lemon, grated
2 garlic cloves, minced
2 tbsp. sesame oil
2 tbsp. low-sodium soy sauce
1 ½ pack dumpling wrappers
3 tbsp. vegetable oil
Instructions
In a large bowl, fold in the chicken, green onions, lemon juice, and grated
zest, garlic, sesame oil, and soy sauce. Mix properly and set aside for 2
minutes
Place a wrapper in a flat plate and scoop a spoonful of the chicken mix into
the center of the wrapper. Moisten the edges and close them, use your
fingers to press them to seal.
Pour the vegetable into a large nonstick saucepan and place it over low heat
Once the oil is hot, add the wrapped dumplings into the pan, cover, and
cook for 5 minutes.
Open the lid and flip the sides over from time to time till it cooks through
and both sides fairly tanned.
Dish from the pan, allow to cool and serve

20 dumpling wrappers
2 medium scallions
3 tbsp. soy sauce
1 tbsp. sesame oil
1 tbsp. serrano pepper, nicely minced
6 ounces cooked steak, finely diced
2-quart coconut oil
2tsp. garlic sauce
Instructions
In a medium-size bowl, fold in the steak, sesame oil, 1tbsp of soy sauce,
pepper, and scallions. Mix properly and stand for 2 minutes
Place a dumpling wrapper in a flat plate
Take a spoonful of the steak mix and place in the center of the wrapper
Dampen the edges with water and fold it into a triangle by folding the
opposite edges.
Pour the coconut oil into a nonstick skillet and fry the wrapped dumpling
over medium heat
Fry till golden brown and drain in a paper towel
Dish into a plate and serve the garlic sauce and remaining soy sauce

5. Chinese mandu bean sprout and onion
dumpling

Ingredients
25 round wonton
½ lb. pound beef
3oz coleslaw mix
2oz bean sprouts
3 tbsp. sesame oil, divided
3oz tofu, extra firm
1 ½ tbsp. yellow onion, nicely diced
1 ½ scallions
¼ tsp. kosher salt
1 garlic clove, minced
1 ½ tbsp., hoisin sauce
½ cup extra virgin oil for frying
1tsp. ground black pepper
Soy sauce for serving
Instructions
In a large nonstick skillet, toss in 1tablespoon of sesame oil and beef, cook
in medium heat till meat turns brown and cooked through.
Drain the meat and leave aside
Add another 1 tablespoon of sesame oil to the skillet and fold in the onions,
fry it for 2 minutes. Add the cabbage and cook for another 2 minutes
At this point, add the scallions, garlic, diced bean sprouts to the cabbage
mixture, stirring and frying. Squeeze the tofu liquid and add to the
saucepan, stir and cook for 3 more minutes. Drain the vegetables in a
colander and set aside
In a large bowl, combine the meat, hoisin sauce, salt, and the vegetable mix.
Mix to a perfect blend.
Spread a mandu wrapper in a platter and add a spoonful of the beefy-
vegetable mix on it
Wet the round edges and fold
Use your fingers to tweak and form a layered edge
Place a large skillet over medium heat
Pour some oil into heat and fry the dumplings till golden brown
Serve with soy sauce

In a medium deep bowl, mix the flour, baking powder, and salt.

Set a broth or gravy on fire and add a spoonful of the dough into the
cooking broth or gravy

In a medium bowl, whisk the cheese cream, sriracha sauce, and chives to a
fine blend and leave aside
Spread the wrappers on a flat surface and scoop a spoonful of the mixture
into each wrap.
Wet the wrapper edges with water and clap them together, twisting the
edges with your fingers to make a fine wrap.
Pour the oil into a nonstick large saucepan and fry the dumplings over
medium heat
Drain with a paper towel and serve with a dipping sauce

2 large sweet potatoes, peeled, cut into chunks, cooked and
drained.
3 tbsp. sesame oil
2 medium shallot, nicely minced
2 tbsp. soy sauce
1 garlic clove, finely minced
3 tbsp. chives
35 wonton wrappers
2tsp. ginger powder
1 cup coconut oil for frying
Instructions
In a large bowl, mash the boiled potatoes with a fork
Fold in the sesame oil, shallot, garlic, ginger, chives, soy sauce, and mix
through.
Prepare the wonton on a flat surface
Scoop a spoonful of the mixture into the ready wonton wrapper
Moisten the edges with water and wrap it to seal, repeat the process for the
remaining wrappers
Prepare the oil in a large skillet over medium heat
When hot, add the wrapped wontons into the oil and cook for 10 minutes,
stirring and turning from time to time.
Put off the heat when dumplings are fairly tanned and drain in a paper
towel.
Serve with soy sauce or any dipping sauce

1 garlic clove, nicely minced
30 wonton wrappers
3oz fresh button mushrooms
Canola oil for frying
Dipping sauce
Instructions
Over low heat in a large nonstick skillet, fry the bacon till brown. Fold in
the mushrooms and cook till tender.
Add the chopped spinach and garlic and cook for more 2 minutes till the
spinach wilts. Take it away from the heat and leave for cooling
Toss the goat cheese into the saucepan and combine properly with the
cooked content
Prepare the wonton wrappers on a flat surface and dish a spoonful into each
wrapper.
Moisten the edges and crimp it up
Pour the canola oil into a large skillet, heat it and fry the dumplings
Remove them when golden brown and drain in a paper towel.
Serve with a dipping sauce

Roll the wonton vertically and use the chives to tie midway to the edges,

2 cups canned pumpkin puree
1 ½ pumpkin pie spice
2 ¼ tbsp. brown sugar
25 wonton wrappers
1 egg
1 tbsp. water
1 tbsp. white sugar for dusting
Peanut oil for frying
Instructions
In a medium mixing bowl, combine the pumpkin puree, cheese cream,
brown sugar, and pumpkin pie spice to a smoother consistency.
Prepare the egg wash by whisking the egg with 1 tablespoon of water, leave
aside
Prepare the wonton wrappers on a leveled surface
Spoon the mixture and place it on each wonton wrapper
Wet the edges with egg wash before crimping them
Fry it in the peanut oil till crisp and lightly tanned
Drain all in a paper towel and drizzle the white sugar over them
Serve with chili dip, maple dip, or soy sauce

6oz cream cheese, softened
1 ½ tbsp. fresh mint
¼ tsp. kosher salt
20 wonton wrappers
Egg wash (1 egg whisked with 1 tablespoon of water)

Preheat oven to 300 degrees, grease and line a baking tray with parchment
paper
In a small bowl, mix the peas, mint, and salt till well incorporated
Spread out the wonton wrappers on a flat surface
Place a slice of cheese on the center of each wrap
Top with a spoonful of the peas mixture
Moisten the edges with the egg wash and crimp them
Brush the surface of the dumpling with the egg wash and bake for 25
minutes or till golden brown.

1-pound pork
1 ½ tbsp. sesame seed
2 garlic cloves, finely minced
1 ¼ tsp. sriracha
1 large egg, beaten
3½ tbsp. chives
3 tbsp. soy sauce
1 cup. soy sauce
1 tbsp. grated ginger
2 tbsp. sesame oil
1 tbsp. well-seasoned rice vinegar
30 wonton wrappers
1 cup sunflower oil for frying
Instructions
In a medium bowl, fold in the sesame seeds, 1 tablespoon chives, ½ cup soy
sauce, sriracha, rice vinegar. Mix properly and leave aside
In another large bowl, place the pork, egg, garlic, ginger, 2tbsp. chives,
sesame oil, and mix properly to a fine blend
Prepare the wonton wrappers on a flat and fairly floured surface
One wrapper at a time, scoop the pork mixture into the middle of the
wrapper
Moisten the edges with water and crimp to make nice petals and seal it
Place a large saucepan over low heat. Add the sunflower oil and fry the
dumplings 10 at a time, so they don’t stick to each other
When the dumplings are browned, add a cup of water and cook for 5
minutes to ensure the pork is cooked through
Dish into plates and serve with the soy sauce

Ingredients
3lbs shepherd’s purse or any leafy vegetable of choice
1/3 cup Shaoxing wine
1pound pork
1 tbsp. kosher salt
2 ½ tbsp. sesame oil
2 ½ tbsp. soy sauce
½ tsp. white pepper
20 dumpling wrappers
1 cup vegetable oil for frying
Instructions
Wash your vegetables and blanch them in a saucepan of boiling water
Remove from the boiling water and give a cool bath in ice-cold water. Ring
the water out and cut them into tiny fine bits
In a large bowl, stir in the chopped vegetables, meat, wine, white pepper,
sesame oil, soy sauce, and salt. Combine thoroughly and add some water
and stir if not finely incorporated
Spread the dumpling wrappers in a flat floured surface
Dampen the edges with water or egg wash (if you have)
Scoop a spoonful into the middle of the wrapper, crimp it to seal while
making petal-like edges
Fry them in a large skillet for 10 minutes or till golden brown.
Alternatively, you can boil it in a pot of water till they float and cooked
through.

16. Chinese mushroom dumpling soup

Ingredients
6oz baby mushrooms
2tbsp. sesame oil
3 garlic cloves, finely minced
1 tbsp. Ginger powder
6 cups chicken stock
½ cup carrot matchsticks
1 bunch scallions, nicely sliced
20 frozen pork dumplings
1 head baby bok coy, nicely sliced
1 ½ tbsp. soy sauce
1 ½ tbsp. Chinese cooking wine
1 ¼ tbsp. rice wine vinegar
1 tbsp. hoisin sauce
2 tbsp. red pepper flakes
1 onion bulb, chopped
Instructions
In a large skillet, fold in 1 tbsp. sesame oil and onions, cook till fragrant.
Add the ginger and garlic and sauté for 1 minute
Pour the chicken stocks and scrap the bottom of the pot to make a glaze
While boiling, add the mushrooms, scallions, carrot matchsticks, baby bok
coy, frozen pork dumplings, hoisin sauce, soy sauce, wine, the remaining
sesame oil, and red pepper flakes.
Cook for 15 minutes till the dumplings are well cooked
Dish into a plate and serve

17. Buttery turkey and celery Chinese
dumpling soup
A bowl of multiple flavors is a sign that your luck will come in many
directions and you can be grateful for feeding your loved ones with this
buttery-vegetable dumpling soup.
Ingredients
1 tbsp. melted butter, unsalted
1 cup all-purpose flour
1 ½ cups celery, nicely chopped
1 ½ cups carrots, finely diced
12 cups onion, diced
1 ¼ tbsp. low-sodium turkey bouillon
1 garlic clove, minced
1 ¼ pound turkey breast, skinned and bone-free
3tsp. fresh sage, minced
½ tsp black pepper
2 bay leaves
1tsp. baking powder
½ cup milk
A handful of parsley, chopped
A pinch of salt
1egg yolk, beaten
Instructions
In a pressure pot over low heat, pour the melted butter in and toss in the
garlic, celery, onions, carrots and sauté for 4 minutes or till vegetable wilts.
Add 1 teaspoon of flour to the simmering vegetable, stir and cook for an
additional 2 minutes.
Pour in 5 cups of water, bay leaves, bouillon, sage, turkey breast, ¼
teaspoon of pepper. Cover the lid of the pan and cook for 20 to 25 minutes
Let out the pressure, take out the turkey, and shred. Remove the bay leaves,
add back the shredded turkey breast and sauté.
In a medium bowl, fold in the baking powder, remaining flour, pepper, salt,
and sage.
Whisk the egg with the milk and add to the flour content. Combine properly
into a nice dough and cut into dumplings.
Drop them into the simmering content and cook for 5 minutes. At this stage,
the dumplings will expand and you are free to dish your soup into a bowl.
Garnish with parsley and more pepper if you like

18. Kim’s stewy dumpling

Ingredients
1 cup all-purpose flour
½ cup butter
4 tbsp. water or as needed
Instructions
In a large bowl, combine the flour with the butter, taking care to rub it with
your fingers till well incorporated to fine crumbles
Add water to the flour mix and work out a firm dough
Place on a floured surface and cut out as many dumplings as you can
Add the dumplings into your cooking stew or casserole and cook for 20
minutes. (take note, the dumplings will absorb the liquid in your sauce so
make sure it is not thick before adding the dumplings.
Dish and serve!

19. Oniony egg dumpling
Instruction
In a medium bowl, combine 1 egg, wine, salt, sesame oil, chicken, chopped
onions, and sugar to a fine consistency
Prepare your egg dumplings by cracking and whisking the remaining 3
eggs, cornstarch, and water till it gets a little foamy
Heat a skillet over low heat and scoop a spoonful of the egg mixture into
the skillet to form a circle.
Flip it to the opposite side and transfer it to a dry plate. Repeat the same
action for the remaining content till you get all the wrappers you can
Spread the ready wrappers on a flat surface and spoon a portion of the
chicken filling into it. Wet the edges with water or egg wash and seal it.
Place the dumplings in a large pot of broth and cook for 30 minutes
Dish out and garnish with chopped green onions

Fried-shrimps are very tasty and full of protein. And when they finally

Ingredients
6oz raw shrimps, shelled
10 wonton wrappers
Coconut oil for frying
1 tsp. black pepper
¼ tsp. kosher salt
1 ¼ tsp. sesame oil
½ tsp. fish salt
Mayonnaise for dipping
Instructions
Take ½ of the shrimps and cut into bits and mince the other half
Mix the minced shrimps and the cut shrimps with the other ingredients and
leave aside
Prepare the wonton on a flat surface
