At the end of the lesson, the students are expected to:
1. Identify different types of bread
2. Determine the bread suited for sandwich making
3. Create their own sandwich based on the different types of bread

With that, lets us have our main topic for
today which is all about the different types of
bread.
But before that, can you please give me the
meaning of bread?
Students may answer:
Bread - it is a food made of flour, water,
and yeast or another leavening agent,
mixed and baked.
Very good! Okay now, let me ask you do you
think bread is important in our cuisine?
Student may answer:
Ma’am I think bread is one of our staple food,
especially for breakfast and miryenda.
That’s correct! Can you please give me one
bread that is well known in our country?
Student may answer:
That’s right! It’s one of our go-to breakfast. That will be pandesal ma’am.

Exactly! Can you please tell me what is the
leavening agent used for the yeast bread? Student may answer:
I think based on the name of bread; it will be
yeast ma’am.
Very good! But do you know the other
leavening agent we can used for bread? Student may answer:
I think we can use baking powder and baking
soda also ma’am.
That’s right! So, we can conclude here that
with just one different ingredient use can
change the end of our product.
Very good! Kindly read the meaning of it. Student may answer:
Wheat Bread
It is a classic bread for sandwiches, it is
nutritionally superior to white bread, taste
better and have more interesting textures.
That’s right! For the wheat bread basically,
the flour used for it is wheat, which is good for
those who are dieting.
Rye Bread
A heavy and a hearty flavor bread that goes
with so many types of meat and condiments.
Okay, thank you. This one is same with the
last one the flour used for it is made of rye.
But can you tell me what will be difference
between the Wheat bread and Rye bread? Student may answer:
Ma’am I think the flour used for it.
That’s correct! Like what I said earlier just one
different ingredient the product will be
different. To be specific the flour use in Rye
bread is rye flour.

Different types of bread
Yeast Bread – loaf bread is the
most used bread for sandwiches
White Bread – these are long
rectangular loaves that provide
square slices, it is one of the most
versatile sandwich breads.
Wheat Bread – it is a classic bread
for sandwiches, it is nutritionally
superior to white bread, taste better
and have more interesting textures.
Rye Bread – a heavy and a hearty
flavor bread that goes with so
many types of meat and
condiments.
Quick Breads – these breads are
raised by chemical action of baking
powder or baking soda like biscuits,
banana bread, carrot bread and
generally more tender and crumblier
than yeast bread. It is used for
sweeter tasting sandwiches and are
best for
tea sandwiches.
Sandwich Rolls – a soft type of
bread that come in all sizes, shapes,
and textures.
French and Italian Bread – rolls
including sourdough and ciabatta,
split horizontally. It works well for
grilled sandwiches
Flat Breads – are made from
flatten often unleavened breads
Pita – it comes in both white and
whole wheat. As the flat bread
bakes, it puffs up, forming a pocket
that is perfect for stuffing
Focaccia – flat Italian bread, a cousin
of pizza an inch or more thick and
very rich in olive oil. It is sold by whole
and cut into squares, split, and filled.
Lavash – small and rectangular, when
softened in water, can be rolled
around a stuffing to make a pinwheel
shaped sandwich.
Tortillas – unleavened round corn
meal breads baked on a hot stone,
size ranges to 6 inch-14 inch or
larger preferably used for quesadillas
and burritos.
IV. ASSIGNMENT
For our next meeting, we will be having our very first laboratory work which is
all about HOT SANDWICH.
Make sure to bring all your ingredients to be used and of course your
personal protective equipment also.
