two into an ultra flavorful fusion dish? This curry
pasta might not be authentic food, but it is
certainly a delicious combo! You won’t regret

(VEGAN, GF OPTION)
This is a simple, flavorful one-pot dinner recipe
combining pasta and curry -- you'll get the best
of both worlds!

INGREDIENTS
1 onion | diced
4 cloves garlic | minced
2-3 tbsp red curry paste | to taste
1-2 green chilis | minced; omit for less heat
1 tsp curry powder
1/2 tsp cayenne | omit for less heat
1/2 tsp black pepper
1 cup vegetable broth
8 oz dry pasta of choice | use GF if needed
1 14-oz can coconut milk | lite or full-fat
1 14-oz can cooked chickpeas
INSTRUCTIONS
1. In a large pot, fry the onion and garlic in
some oil/water until fragrant, around 4-5
minutes.
2. Add in the pepper, curry paste, and spices
with a splash of water, and stir well.
3. Add in coconut milk, broth, and pasta. Stir
and cook covered on low heat. Stir the pasta
occasionally to prevent sticking,
4. When pasta is cooked through, after around
10-15 minutes, stir in the chickpeas, turn off
the heat, and serve.
