PERPILYA RECIPE

Perpil ya is a traditional Igorot dish from the Cordillera region in the Philippines. It typically consists of
pork cooked in bamboo tubes, resulting in a flavorful and aromatic dish. Here's a simplified version of
the Perpil ya recipe that you can try at home:

Ingredients:

 1 kg pork belly or pork shoulder, diced into small pieces

 1 onion, chopped

 4 cloves garlic, minced

 2 tomatoes, chopped

 2 tablespoons soy sauce

 1 tablespoon vinegar

 Salt and pepper to taste

 Banana leaves or aluminum foil, for wrapping

 Bamboo tubes or aluminum foil, for cooking

Instructions:

1. Prepare the Bamboo Tubes:

1. If using bamboo tubes, make sure they are clean and dry. Cut them into manageable lengths,
around 12-14 inches long.

2. Seal one end of each bamboo tube with a piece of banana leaf or aluminum foil to prevent the
ingredients from falling out during cooking.

2. Marinate the Pork:

1. In a bowl, combine the diced pork with soy sauce, vinegar, minced garlic, chopped onion,
chopped tomatoes, salt, and pepper. Mix well to ensure the pork is evenly coated with the
marinade.

2. Let the pork marinate for at least 30 minutes to allow the flavors to meld together.

3. Fill the Bamboo Tubes:

1. Take a piece of banana leaf or aluminum foil and place it on a flat surface.

2. Spoon the marinated pork mixture onto the banana leaf or foil, dividing it evenly among the
pieces.

3. Roll up the banana leaf or foil tightly around the pork mixture to form a cylindrical shape, similar
to a sausage.
4. Insert the rolled-up pork mixture into the bamboo tube, packing it tightly to ensure it stays in
place during cooking.

5. Seal the open end of the bamboo tube with another piece of banana leaf or aluminum foil.

4. Cook the Perpil ya:

1. Prepare a grill or open fire.

2. Place the filled bamboo tubes directly over the coals or flames, ensuring they are securely
balanced.

3. Cook the Perpil ya for about 45 minutes to 1 hour, turning occasionally to ensure even cooking.

4. To check if the Perpil ya is done, carefully open one bamboo tube and test the pork for
doneness. It should be tender and fully cooked.

5. Once cooked, remove the Perpil ya from the heat and let them cool slightly before serving.

1. Carefully unwrap the banana leaves or aluminum foil from the bamboo tubes.

2. Transfer the cooked pork onto a serving platter.
