BICOL EXPRESS RECIPE

Ingredients:
500g pork belly, thinly sliced
2 cups coconut milk
4 cloves garlic, minced
1 onion, chopped
2 tablespoons shrimp paste (bagoong)
4-6 pieces long green chili peppers (siling haba), sliced diagonally
2-4 pieces red chili peppers (siling labuyo), chopped (adjust according to desired spice level)
1 thumb-sized ginger, sliced into thin strips
2 tablespoons vegetable oil
Salt and pepper to taste
Instructions:
1. Prepare the Pork:
Heat vegetable oil in a large pan or wok over medium heat.
Add minced garlic and chopped onion. Sauté until fragrant and translucent.
2. Cook the Pork:
Add the thinly sliced pork belly to the pan. Cook until the pork is lightly browned and slightly crispy.
Stir in the shrimp paste (bagoong) and cook for another 1-2 minutes, allowing the flavors to meld
together.
3. Add Chili Peppers and Aromatics:
Add the sliced long green chili peppers, chopped red chili peppers, and sliced ginger to the pan. Stir to
combine.
Let the mixture cook for a few minutes until the peppers are slightly softened.
4. Simmer in Coconut Milk:
Pour in the coconut milk, stirring well to combine all the ingredients.
Bring the mixture to a gentle simmer, then reduce the heat to low.
Let the Bicol Express simmer for about 15-20 minutes, or until the pork is tender and the flavors have
melded together.
If the sauce becomes too thick, you can add more coconut milk or water to achieve your desired
consistency.
5. Season and Serve:
