CHAPTER I
INTRODUCTION
1.1 Background of the Study
Coffee is one of the world’s most popular beverages. It
is the most widely consumed liquid in the world aside from
water. Coffee is more than a beverage, however. It is a
memory, an anticipation, a lifetime of consoling moments of
modest pleasure woven into our lives. (Merritt, 2020)
Coffee's popularity as a beverage is undoubtedly due to
the caffeine it contains as well as its sensory appeal. Coffee
lovers have come to associate caffeine's energizing lift with
the richness and aroma of the beverage that delivers it. It is
also a very labor-intensive process involving a vast
intercontinental collaboration that begins with the coffee
grower and moves to the picker, then to the mill workers who
meticulously remove the fruit and dry the beans, then to those
who clean and grade the beans, to those who roast them, to
those who consume the beans and prepare the beverage. Every
act can be performed with passion and precision, or with
careless shoddiness. The combined quality of all these
creative contributions is what distinguishes a mediocre cup
from a fine and distinctive one.
Nasipit has no existing coffee shop and the majority of
the people in the area enjoy coffee and by that the
1
researchers decided to conduct this study. The “2J’s Coffee
Shop” is a themed coffee shop providing a place for comfort
and relaxation where customers can post their messages and
“hugot lines” on the wall provided and provides a meeting
place where teachers or businessman and businesswoman can talk
about work or important matters. Coffee is considered as a
very healthy beverage because it is loaded with antioxidant
and beneficial nutrients that can improve one’s health. The
2J’s Coffee Shop will be commenced at Barangay 4, Nasipit
Agusan del Norte.

city. It has been a location for couples, business meeting or
even personal matters. However, in a municipality like
Nasipit, Coffee Shops is a rare business establishment. So
here are some of the problems that the researchers want to be
answered:
1. What brand of coffee to be served?
2. What strategies and techniques will be used in order to
advertise the business?
3. Is the Coffee shop Significant to Nasipit Agusan del
Norte?
2

1.7 Review of Related Literature
The Philippines is not just a country known for its rich
natural resources and culture, its own coffee industry is also
thriving in the global trade and business. In the history, the
Franciscan friar in the year of 1749 is said to be the first
8
one to brought coffee in the country. However, an unfortunate
event happened as the coffee rust disease destroyed crops at
the end of the 19th century. By the end of the Spanish
colonization, the Philippines was a top coffee exporter but
several factors like lack of government and urbanization made
it extinguished.
Today, the largest coffee plantation in the Philippines
is situated in a mountainous region near the town of Alcoy in
the southern part of Cebu City in about 700 meters above sea
level. The Robusta Coffee Plantation is the most popular in
the country having plantations in Bukidnon, Misamis Oriental,
Sultan Kudarat, Bataan, Bohol, Cebu, Compostela Valley and
Palawan and various other regions and the Nestle Company buys
a large percentage of these harvests. “Much of the coffee
grown in the Philippines (about 85%) is the lower quality
Robusta is resistant to different kinds of pest and disease
which is largely used to produce instant coffee. About 5% of
coffee production in the Philippines is the higher-grade
Arabica coffee which is known as Kapeng Tagalog that is
considered to be the best coffee bean in the country because
of its excellent flavor and aroma, while 7% is the Excelsa
varietal which is resistant to drought. About 3% of Philippine
coffee is the Liberica Coffee varietal and known as Kapeng
Barako, favored for its ability to grow in a variety of soil
types. (Quetulio,2022)
9
The Philippines is one of the few countries currently
producing the four varieties of commercially viable Arabica,
Robusta, Liberica, and Excelsa. Philippine Liberica is known
locally as Barako/Baraco, a coffee bean that produces a
distinctively robust and powerful cup. The bigger cherries and
beans are a staple in the Philippine coffee scene, primarily
grown in the provinces of Batangas and Cavite. The story of
Philippine coffee is akin to a rich and aromatic brew,
blending myth with historical facts and presenting a colorful
journey dating back to the 1700’s. One famous myth relates how
a Franciscan monk brought three gantas (approximately 2 kilos
in weight) of Arabica beans to the country, planting them in
his garden after which the coffee trees were transplanted to
other areas in the central island of Luzon. While there is a
lack of historical data tracing the actual details of when
coffee first came to the country, it has been surmised that
Arab traders or Muslim settlers may have brought the beans
during their trade routes or pilgrimages. By the 1800s, coffee
trees were already found in the northern city of Lipa,
Batangas and the province of Bulacan. Its propagation was
encouraged by Augustinian friars, who furthered the care and
cultivation for these trees.
The southernmost part of the Philippines has become one
of the prime sources for quality coffee, aside from being a
major producer. The bulk of production is in the southern
10
island of Mindanao with 64% of the total land area and 69% of
total number of fruit-bearing trees from the total national
production. Robusta, Excelsa and Arabica have been grown here
with ideal soil and climate conditions. Basilan is an island
province in the ARMM, bordered by Basilan Strait, Sulu Sea,
Moro Gulf, and Celebes Sea. The simple terrain consists of
slight slopes along the coastal areas with hilly interiors.
(philcoffeeboard.com)
According to Srivastava and Ral (2013), customers are
very concerned with the quality of services they received
nowadays. In fact, they also tend to compare their experience
on service quality with their pre-consumption expectation.
Such comparison is able to reflect the reaction of customers
towards the satisfaction or dissatisfaction with the products
or services whether they will have the intention to
repurchase.
According decorating to Wakefield and Blodgett (1996), a
dull condition may not give a relaxation for customers, but
will make customers feel sleepy. Some customers especially
students or workers who bring along their laptop and wish to
stay at coffee shop to do their work, they may feel headache
and eye ache when facing this kind of condition because the
light of laptop is too bright for them. Hence, they will feel
disappointed and refuse to visit the coffee shop anymore.
Customers will feel uncomfortable with the surrounding and
11
will just leave the coffee shop. Therefore, all elements that
are related to ambience plays important role in satisfying
customers (Ryu and Jang, 2007).
According to Statista Research Department (2021) the
total coffee consumed in the Philippines in 2020 was about 3.3
million 60 kg bags. This reflects a long-term increase in
coffee consumption over the years.
Coffee is a beloved beverage known for its ability to
fine-tune your focus and boost your energy levels. In fact,
many people depend on their daily cup of joe right when they
wake up to get their day started on the right foot. In
addition to its energizing effects, coffee has been linked to
a long list of potential health benefits, giving you all the
more reason to get brewing. (Rachael Link, MS, RD,2022)
1.7.1 Market Demand
Coffee shop is considered as a “third place”. It is the
social surroundings separate from the two usual social
environments of home and the workplace. Coffee shop emphasizes
on providing a free place for social interaction which is
highly accessible, offers inexpensive foods and drinks and
brings about a welcoming and comfortable environment.
The Philippines Graphic 2018 consumer report say eight
out of 10 adults in the Philippines. Philippines consumption
12
of coffee continues to increase. Experts predict that the
level of consumption will follow population growth.
This growth offers excellent opportunities for new
companies to enter this market, and we are excited about the
possibilities of what the 2J’S Coffee Shop can accomplish in
the market of Nasipit Agusan del Norte since the said firm
will be the first coffee shop to join the Nasipit Agusan del
Norte market, it will gain a lot of strength rather than
weakness because there will be no competition at the said
area. The majority of people in the said location enjoy
coffee, and because the area has schools, this will be a
popular trend among teachers, students, and people who enjoy
drinking coffee while working or studying.
1.7.2 Management and Organization
The 2J’S Coffee Shop will be managed by the six (6)
founding partners, whose individual areas of expertise cover
many of the functional aspects of the business. The six
founding partners are graduated in a course of Bachelor of
Science in Business Administrations. The goal of the 2j’s
Coffee shop is to have a team of committed associates who
empower each other so that the customer’s expectations can be
exceeded. To ensure our personnel are meeting our
13
expectations, we will hold a minimum of quarterly meetings
with all employees so that results can be reviewed and future
plans can be discussed. At least twice a year, a refresher
course will be required on product knowledge and how to exceed
our customer’s expectations.
Our goal is to offer career opportunities,
advancement opportunities and a level of income and benefits
that is competitive within the region and job classification.
It is our long-term goal to be the preferred coffee shop in
Nasipit Agusan del Norte. Not only will we train our employees
to deliver excellent service, we will give them the
flexibility to respond creatively to customer’s requests. In
addition, we will continually monitor our customers level of
satisfaction with our service through surveys and other
convenient feedback opportunities.
1.7.3 Financing
In starting a business-like coffee shop, the first thing
to do is to provide the capital to finance all the operation
costs on the project. The money should be enough to supply the
needed equipment for the project. Though, the owners of the
project got their money from their own savings and from their
own relatives and friends. The owners agreed upon that they
will spend the money they save from starting a coffee shop
14
project. The five (5) founding partners decided to put up
178,000 pesos each as capital, resulting in 890,000 pesos
total capital. The amount is enough to establish the said
business.
1.7.4 Technical/Production
Our coffee and operating system shall strive to attain
service excellence in addition to manufacture safe and good
quality of our products. This shall be undertaking through
engage of the modern product.
To make our coffee product we used a good type of coffee
machine which is the breville coffee maker. It also has to
tackle a wide range of coffee style plus function as a
variable temperature electric kettle. Also, we have an owned
oven to bake the cakes we offer.
The other materials that we need in operating our
business are; coffee cups, teaspoon and saucer plate in
serving our coffee and we have our seat of sofa and also, we
have a speaker so that our customer have a good and cool
ambience and furniture to give a good view in our shop.
The shop will be located in Brgy. 4 Nasipit Agusan del
Norte which is 600-800 square feet. The operating space will
consist of an oven and coffee machine, counter and serving
area, ambient display cases, an eating area and a rest room.
15
The business will operate in weekdays in Monday to Friday
and the hours of operation will be 8:00am to 11:00pm and 7:00
am to 10:00 pm every weekend.

17
distinct competitive advantage: this will aid in the growth of

owners in understanding the true meaning of value: the value
of the product as well as the value of the person or brand
that delivers that product.
2J’s Coffee Shop will be the municipality of Nasipit
Agusan del Norte’s first coffee shop. As a result, the company
will grow stronger rather than weaker, and new opportunities
will emerge. According to the majority of those who responded
to the researcher’s survey, they enjoy drinking coffee but
would rather stay at home. So the company creates a venue
where they can relax and hold their meeting, as well as
providing them with high-quality coffee, pastries, and
kakanin, and ensuring that they receive excellent service.

marketing which heavily influences the customer's
satisfaction. 2J’s Coffee Shop provides its customers with the
finest and quality coffee beverages as well as pastries and

Caffè Mocha or café mocha - is an American invention and a
variant of a caffe latte, inspired by the Turin coffee
beverage Bicerin. The term “cafe mocha” is not used in Italy
nor in France, where it is referred to as a “mocha latte”.
Like a cafe latte, it is typically one third espresso and two
thirds steamed milk, but a portion of chocolate is added,
typically in the form of sweet cocoa powder, although many
varieties use chocolate syrup. Mochas can contain dark or milk
chocolate.
Affogato - Espresso shot poured over vanilla ice cream.
Café Americano - is made by pouring hot water over one or two
espresso shots, resulting in a drink of similar volume and
strength to regular coffee
Espresso - a short black coffee topped with natural crema (the
Holy Grail of espresso) poured to a length of 30ml and not
filling the cup.
Cappuccino - full-bodied intense espresso topped with two
kinds of heated milk, steamed and frothed. Steamed milk is
milk that has been scalded-its volume is unchanged. Foamed
milk is both heated and aerated. The classic proportions are
one-third espresso, one-third steamed milk and one-third
foamed milk.
Macchiato - stained or spotted (ie. With milk). A serving of
espresso stained with a teaspoon of milk.
19
Pastry - is baked food made with a dough of flour, water and
shortening (solid fats, including butter or lard) that may be
savoury or sweetened. Sweetened pastries are often described
as bakers’ confectionery. The word “pastries” suggests many
kinds of baked products made from ingredients such as flour,
sugar, milk, butter, shortening, baking powder, and eggs.
Small tarts and other sweet baked products are called
pastries. Common pastry dishes include pies, tarts, quiches,
croissants, and pasties.
Kakanin - The name kakanin is derived from two Tagalog words:
“kain” (to eat) and “kanin” (rice). It’s an umbrella term for
sweets made of glutinous rice and coconut milk, two
ingredients that tropical countries like ours have in
abundance. These ingredients are usually employed in one of
two forms. Some recipes use galapong, made by soaking rice
flour overnight, then grinding and straining it using a
cheesecloth. Other types of kakanin use simple malagkit or
sticky rice grains that are either ground up or left whole.

we can get a 10% return on this money at the very least, we'll
use 0.10 for I, 3 for t, and P150,000.00 for PV to solve for

● FV = 178,000 x (1+0.10)³

Profit Margin = (Total Revenue – Total Expense) / Total

= 0.15 or 15% Profit Margin
CHAPTER VI
52
ECONOMIC DESIRABILITY
6.1 Stockholder Theory
The stockholder theory is a normative business
ethics theory concerning the issue of “how businesses and
business people should behave”. The stockholder theory is a
theory about the corporation and its moral purpose and
responsibilities. The main proponent of this theory is Melton
Friedman. The theory holds that “Business are merely
arrangement by which one group of people, the managers, to be
used to realize specified ends and for which the stockholder
receive an ownership interest in the venture.
6.2 Stakeholder Theory
One which states that businesses do have social
responsibilities; for instance, businesses have a
responsibility to not detract from the well-being others, and
perhaps they are even obligated to charitably PROMOTE well-
being of others. This view is called “Stakeholder Theory”, and
is held by philosophers R. Edward Freeman.
6.3 Stakeholder of the Business
53
In business, a stakeholder is any individual, group,
or party that has interest in an organization and the outcome
of its actions. Common examples of stakeholder include
employees, customers, shareholders, supplies, communities, and
government. Different stakeholder has different interest, and
companies often face trade-offs in traying to please all of
them.
6.3.1. Stockholder/ Owner
Stockholders as also kwon as shareholder, and they
are the risk takers and supporters of businesses. If a company
they invest in make a profit, then they also have a chance to
make a profit as well. On the other hand, if a company does
poorly, they will also have to face a loss. A business entity
in an attempt to profit from the successful of the company.
6.3.2. Customers
Many would argue that business exist to serve their
customers. Customers are actually stakeholder of a business,
in that they are impacted by the quality of service/product
and their value.
6.3.3. Employees
54
Employees have a direct stake in the company in that
they earn an income to support themselves, along with other
benefits (both monetary and non- monetary). Depending on the
nature of the business, employees may also have a health and
safety interest.
6.3.4. Supplies
Supplies and vendors sell goods and/or services to a
business and rely on it for revenue generation and on-going
income. In many industries, suppliers also have their health
and safety on the line, as they may be directly involved in
the company’s operation.
6.3.5. Government
Government can also be considered a major
stakeholder in a business, as they collect taxes from the
company (corporate income taxes), as well as from all the
people it employs (payroll taxes) and from other spending the
company incurs (sales taxes). Government benefits from the
overall Gross Domestic Product (GDP) that companies contribute
to.
