PRODUCTION PROCESS.
Production itself a process for converting the raw material into finished product after passing
though different types of process steps. In the other words production process is a
combination of collectively taken certain steps to receive finished or final product.
1. Milk Storage at plant: - The chilled milk received from various chilling center
stored there in Dinshwas milk factory, Nagpur around 1.8-lakh to 3.5-lakh liter of milk is
collected every day from 35 chilling center across villages of Madhya Pradesh and
Vidarbha for processing at MIDC Butibori, Nagpur.
2. Testing: - villages before collecting the fat it is checked in the laboratory. On
laboratory test they decide about the amount of milk to be collected. All the raw milk
collected at Dinshwa’s laboratory tested the fat and sniff of the milk then it is sent for
pasteurizing.
3. Pasteurizing: - After laboratory test of milk pasteurizing process is conducted
through three pasteurization machines. The milk passed through the above machines
with the help of water pumps. The milk in the pasteurizing machines is heated at 80 to
82 degree for 10-15 minutes and after it is cooled at 5‘Co. After this method the
pathogenic bacteria present in the raw milk are destroyed and the milk becomes good for
use. Now this process milk goes to separator machine and some part of milk is sent to
patching machine.
4. Processing:- First, they will need to select the ingredients to use, weigh them and then
blend them together for about eight minutes. This ensures complete mixing of dry
ingredients and liquid. Blending the ingredients results in what is known as the “ice
cream mix”. This part of the process requires rapid agitation to incorporate powders and
usually high-speed blenders.
5. Freezing:- In this part of the ice cream making process, the mix can be frozen in
continuous or batch freezers. Portion of the water is frozen and air is whipped into the
frozen mix to give the ice cream its characteristics lightness. The ice cream mix is
usually pumped through the freezer and then drawn off the other end with in a seconds
or 10-15 minutes (for the case of batch freezers).
6. Packaging:- Finally ice cream is packaged as desired.
7. Storages:- All finish products placed in the cold storage area at -30 degree conscious.
8. Distribution:- This is a last step in Dinshaw’s plant, they have two exits directly
connected to cold storage section by an cover system. This two exits open at front of
plant section at that place temperature control transport trucks easily load and then those
truck distribute at various location like dinshaw’s ice-cream parlour, distributers etc.
