MOCK SCENARIO:

ACTION(s) TO TAKE TO HANDLE SITUATION TO ENSURE FOOD SAFETY AND QUALITY:

 First Priority is Safety of the People – What was done to ensure the safety of the people?
 What areas of the plant were affected?
 Was product affected?
 If so, how much?
 How would you evaluate product? Can you test it? Can you physically inspect it?
 Final Disposition of the product affected and how was it handled?
o If it is decided to dispose of product, take pictures and document where product was
disposed of and keep great records on process. Ensure you account for all the count/weight.
o If try to save the product make sure have all records to support it is acceptable.
(Time/Temperature Logs, Test Results, Inspection Results, Support you sampled enough
product, etc…)
 How were areas of the plant that were affected put back to acceptable condition?
 Is the water supply safe to use?
 How were the employees’ PPE addressed prior to being used again?
