REVIEW OF THE LITERATURE AND STUDIES
INTRODUCTION
This chapter begins with the research framework of the study, followed by the
discussion of multiple concepts that serve as the backbone of the study in conceptually,
theoretically and empirically way. Some prior research conducted on the concept and
the issues raised are also discussed in this chapter. Lastly, this chapter concludes the
discussion by proposing the relationships among the variables used in the research
framework.
Foreign Literature
Past research has empirically examined the importance of food quality in the
restaurant setting the due to food is the core product of a restaurant and plays a crucial
role in influencing customer satisfaction and determining the post- dining behavioral
intentions (Liu and Jang, 2009). A number of the food service providers claim that
people go to the restaurant for the food and they are satisfied if they get the food they
want (Andale and Conway, 2006). Thus, can be concluded that food is highly related to
customer satisfaction in the restaurants (Johns and Howard, 1998; Kivela et al.,1999).
Among the seminal studies are those conducted by Namkung and Jang (2007) who
identify food quality in terms of food presentation, taste and temperature leading to a
favorable customer satisfaction, Ha and Jang (2010) have evidenced a positive
relationship between food quality and customer satisfaction and between food quality
and customer satisfaction and between food quality and loyalty in Korean restaurants,
and Sulek and Hensley (2004), who evaluate the importance of food, physical setting
and service in a full-service restaurant, findings reveal that food quality is far more
important to costumer satisfaction and predicting behavioral intentions than other
variables.
Consistent with the previous studies, Qin and Prybutok (2009) have witnessed a
direct link between food quality and customer satisfaction in the FFRs in the United
States. Furthermore, the same findings have also been found in China FFRs (Qin,
Prybutok and Zhao, 2010). In sum, it can be concluded that high food quality often leads
to favorable customer satisfaction among the restaurant consumer across western and
eastern countries. Based on these theoretical foundation and empirical studies.
There has been a growing recognition that perceived value has impacts on
customer satisfaction and behavioral intentions. In an effort to further understand the
relationship between perceived value and customer satisfaction, service and marketing
researchers have begun to examine the relationship between perceived value and
customer satisfaction (Mcdougall and Levesque,2000; Lai et al., 2009).
Local Literature
Carenderia Industry Profile According to Business Diary Philippines (2008), a
carenderia is a local eatery selling and serving viands for the masses. It is also known
as “Turo-Turo” wherein customers literally point what they want to eat. As Spanish
Filipinologist Wenceslao Retana discovered in the 1920s, the origin of the carenderia
can be traced to the word” kari” which means “spice”, or what we know today as “curry”.
Most streets in the Philippines where schools and offices located with exception to
highly developed areas and private properties have carenderias surroundings them.the
carenderias the forerunner of the restaurant concept in the Philippines (Philippine Daily
Inquirer 2011).
History of Carenderia before 1764 there was no Filipino word to infer a
commercial establishment selling cooked food. But by the early 1800s, the carenderia
was recognized as the native food shop, are spite for travelers and a direct ancestor of
turo-turo. According to Felice Prudente-Sta. Maria, and notes that carenderia is most
likely derived from the word cari or kari, a Tamil word for sauce, or a saucy
accompaniment to rice. Some theories attribute this connection to the large number of
breakaway soldiers from the invading British army, mostly East Indian Bengalis or
Tamils, ended up setting in Taytay and Cainta, major tourist routes at the time.
Carenderias became widespread in rural areas only after increased human mobility,
around the late 1800’s. Sepoys were Indian natives who deserted British General
William Draper’s fleet around 1764. They quickly assimilated into the community by
marrying Filipina wives and settling at the lakeside end of the Pasig River about 18
kilometers east of Manila in Taytay and Cainta. Carenderias were affected by tourist
transportation. Like all busy crossroads, Taytay and Cainta reaped revenues from
tourist facilities, in this case eateries. Many tourists noted that the areas from Taytay
and Cainta through the capitol were punctuated by bamboo stalls offering a mixed menu
that included curry. The Spaniard Wenceslao E. Retana, an authority in Philippine
studies, traced the etymology of carenderia in the 1920s to curry that is kari in Tagalog
-the root word of the native dish called Kare- Kare. Relationship between cuisine to
Carenderia According to Tira Andrei (2010) in her study, Filipino cuisine is a contentious
subject within the Filipino community. Moreover, in an authoritative anthology of essays
and illustrations assembled by Filipino gourmets, scholar, historians, and professors,
The Culinary Culture of the Philippines.
