The content of what you write in these in-class exercises does not really matter. You are welcome to “free write” and type any random thought that pops into your head or pick a particular topic if you wish. However, since the point of the exercise is learning the features of the program, it should not be content that will engage you in such a way that you concentrate on writing and not pay attention to the assignment. To that end, it is perfectly acceptable to write something as innocuous as nursery rhymes or fairy tales if you wish. You get the point?
