Carbohydrates come in the form of starches like bread, pasta, and potatoes and sugars like glucose, fructose, and lactose. They provide energy through glucose and also aid in the digestion and absorption of proteins and fats. If more carbohydrates are consumed than needed for energy, the excess is stored as glycogen in the liver and muscles. Complex carbohydrates from whole grain sources and fruits are preferable as they also supply fiber, vitamins, and minerals along with energy.
