Since 2011, Bragança has had Bôfumeiro, Lda. Managed by José Patrício and now associated with AIP, the company specializes in regional sausages, keeping the gastronomic tradition of Trás-os-Montes alive.

Over more than a decade of activity, Bôfumeiro has created a wide range of products, among which the famous alheiras stand out, including variants such as game alheira and bísaro pork alheira, as well as meat chouriça, bísaro pork chouriça, chestnut chouriço, sweet chouriço, sour chouriço, butelo, salpicão and sausages with international influences, such as Spanish and French types.
