2 large eggs, ½ carrot, 3 cherry tomatoes, 1 handful coriander leaves, ½ inch ginger, 2 tbsp milk, 1 onion, 2 green chilies, salt and pepper to name a few, ½ tsp chili powder, 1 tsp minced garlic, cheese optional.

To begin with this easy recipe, wash the veggies.

Next, chop the veggies and transfer them to a plate.

Now, take a bowl, crack two eggs and add 1 teaspoon of water or milk. Using a fork or whisker, whisk the eggs till it turns foamy.

At this stage, whisk the foamy mixture till it turns frothy and then add in spices, salt and pepper. Meanwhile, heat the pan and add oil.

Now, once the oil is hot, pour in the egg blend and spread it nicely. Then add in the toppings.

Cover the pan with a lid. Season with salt and pepper.

Garnish with chopped coriander and serve hot with veggies or toasts and enjoy!
