Dans la #culture arabo-musulmane, ramasser un morceau de pain tombé ou jeté par terre puis l’embrasser est un geste courant. Le #pain occupe une place qui dépasse de loin sa simple fonction #alimentaire : il est un symbole de subsistance, de sacralité et de lien social. Connu sous le nom de ẖubz dans de nombreuses régions, il devient ʿīš – littéralement "vie" – dans des dialectes comme celui de l’#Égypte, illustrant une association entre cet aliment essentiel et le don de la vie. Les transformations #économiques et #politiques du XXᵉ siècle ont marqué l’#histoire du pain dans les sociétés arabes. Pendant les guerres mondiales et les périodes coloniales, les pénuries ont forcé les populations à substituer le blé par d'autres céréales comme l’orge, bouleversant des traditions séculaires. En #Syrie, sous le régime Baas, la nationalisation des #boulangeries et la standardisation de la #production ont effacé une partie de la diversité artisanale. Ce processus a culminé avec l’introduction du "pain militaire", un produit uniformisé, loin des saveurs et des textures traditionnelles. Ces bouleversements ont affecté plus que le goût : ils ont altéré la dimension communautaire du pain. Malgré ces évolutions, le pain demeure un pilier des tables arabes, en particulier pour les populations les plus vulnérables. À Damas, au Caire ou à Bagdad, il représente, avec le thé, le dernier refuge des démunis, à la fois comme source de #nutrition et comme symbole d’un équilibre social précaire. Toute hausse de son prix peut déclencher des tensions, voire des révoltes. Cette centralité est doublée d’une profondeur culturelle rarement explorée : le pain incarne des valeurs de #solidarité, de partage et d’hospitalité. Des écrivains comme Mohamed al-Naas, dans "Pain sur la table de l’oncle Milad", célèbrent la boulangerie comme un art, tandis qu’Ibrahim Haqi, dans ses mémoires, se souvient des fours collectifs syriens, lieux de solidarité et de sociabilisation. Dans les grandes villes marocaines, des femmes – souvent veuves ou divorcées – perpétuent les traditions en devenant "vendeuses de pain", préparant chez elles non seulement du pain mais aussi des spécialités locales comme le Msemen, le Baġrīr (crêpes mille trous) ou les Rġāīf (galettes feuilletées). Malgré les bouleversements, le pain résiste. Dans de nombreux villages et quartiers populaires, les fours collectifs continuent de cuire le pain "fait maison" qui relie les communautés à un passé où l’alimentation incarnait des valeurs familiales. Aujourd’hui encore, "partager du pain" est un acte de solidarité, un moment de communion autour d'un aliment presque sacré. Plus donc qu’un aliment, le pain reste le miroir d’une #identité collective. Entre continuité et transformation, il raconte l’histoire des sociétés arabes, tissant un lien entre la #terre, l’#artisanat et la #communauté. Il incarne la résilience face aux épreuves, tout en restant un vecteur de transmission culturelle et un emblème de la vie partagée.
