The BEST Brownies! 175 g unsalted butter 200 g 70% dark chocolate 4 large eggs 150 g coconut sugar 1 tsp vanilla extract 75 g plain flour 50 g cocoa powder 2 pinches flaky sea salt Method Preheat your oven to 170°C (150°C fan). Line a 20 cm (8-inch) square baking tin with baking paper. Melt the dark chocolate and butter together over a pan of barely simmering water or in the microwave in short bursts. Stir until smooth, then allow to cool slightly. Whisk the eggs and coconut sugar until slightly lighter and thicker (about 2–3 minutes). Whisk in the vanilla extract. Gradually pour the melted chocolate mixture into the egg mixture, whisking until smooth. Sift together the cocoa powder and plain flour, then gently fold them into the batter. Fold in the flaky sea salt. Pour the batter into the prepared tin and smooth the top. Bake for 25–30 minutes. The edges should be set while the centre still has a slight wobble for fudgy brownies. Cool completely in the tin before slicing. Chilling them for a couple of hours (or overnight) will make them even fudgier and easier to cut.
