New research shows that the beneficial bacteria responsible for giving certain handcrafted cheeses their unique flavors and rich textures might also help support a healthy human gut.Oxfordshire's craft cheeseA study conducted by researchers in the Food Microbial Sciences Unit at the University of Reading closely tracked how microbial life and chemical composition evolved during the aging process of three British cheeses. The cheeses were produced locally by Nettlebed Creamery in Oxfordshire and included a brief-aged soft white rind cheese, a semi-soft washed rind cheese, and a semi-hard cheese aged in hay for around nine months.How cheese protects probioticsLead author Sabrina Longley, a PhD researcher at the university and a cheesemaker at Nettlebed Creamery, noted that artisan cheeses are packed with microbial life capable of promoting gut health.
As these cheeses mature, bacteria create complex aromas and textures while embedded in a dense structure of fats and proteins. This unique matrix acts like a shield, helping the live bacteria survive the harsh journey through the digestive tract so they can reach the gut intact.Key microbial playersThroughout the study, all three cheeses maintained high levels of known probiotic species. Streptococcus thermophilus, a bacterium popular in yogurt making, remained dominant in the semi-soft and hay-aged cheeses as they matured. Another beneficial species, Lactococcus lactis, was consistently present across all three varieties from start to finish.Bonus benefits in the rindThe semi-soft washed rind cheese and the hay-aged cheese also harbored Propionibacterium freudenreichii. This specific bacterium generates propionic acid, a compound known for its anti-inflammatory effects, its ability to help lower cholesterol production, and its role in appetite regulation.For those who eat the whole wedge, the rind turned out to offer its own distinct benefits. The white mold Penicillium candidum, which creates the velvety exterior on the soft cheese, produces chitin. Chitin functions as a dietary fiber that can act as a prebiotic, effectively feeding and nurturing the good bacteria already living in the gut.The power of agingAging the cheese in hay triggered a remarkable surge in microbial variety. By the time the nine-month hay-aged cheese reached full maturity, it contained nearly four times as many bacterial species as it did in its early stages of aging.Relief for lactose sensitivityPeople who struggle with dairy may also find good news in these findings. Lactose, the natural sugar in cow's milk that frequently causes digestive discomfort, was almost completely eliminated by the time the cheeses finished maturing. Lactic acid bacteria consumed and broke down nearly all the lactose during fermentation.What nextWhile the findings are promising, the researchers emphasized that additional study is necessary. Future human dietary trials will help determine exactly how these cheese-borne bacteria behave inside the digestive system and how significantly they influence long-term health.
