Vegetables are treated as though cooking them is simply a matter of taste. But the way they are cooked can change what finally reaches the plate, and in some cases, what the body can use.

Boiling and air frying work in very different ways. Boiling surrounds vegetables with hot water, while an air fryer cooks them with rapidly circulating hot air, usually with little or no added oil. That difference matters because some nutrients are sensitive to heat, while others are easily lost into cooking water.

So, does air frying automatically win the nutrition contest?

Not quite.

Research suggests that air frying can preserve some nutrients and plant compounds better than boiling, particularly because there is little direct contact with water. But it is not universally better for every vegetable or every nutrient. That is the important part of the story. There is no single "best" cooking method for every vegetable.

A bowl of boiled vegetables may look wholesome, colourful and perfectly harmless. The problem is what happens to nutrients that can move from the vegetable into the water.

Vitamin C and several B vitamins are water-soluble. When vegetables sit in plenty of boiling water, some of these nutrients can leach out. If that cooking water is discarded, those nutrients go with it.

A study examining vitamin retention in vegetables found that vitamin C retention varied widely depending on the vegetable and cooking method. Among the methods tested, boiling generally produced the lowest vitamin C retention.

This does not mean boiled vegetables are nutritionally poor. They are still vegetables, and still provide fibre, minerals, vitamins and plant compounds.

The bigger issue is how much water is used, how long the vegetable is cooked and whether the water is eaten or thrown away.

For example, vegetables cooked as part of a soup, sambar or stew have a nutritional advantage over vegetables that are boiled and then drained. Some of the nutrients that leave the vegetable remain in the cooking liquid and can still be consumed.

That makes an everyday Indian cooking habit worth reconsidering. The water left behind after cooking spinach or other vegetables is not necessarily "just water".

Air frying has one obvious nutritional advantage over boiling: there is little water for water-soluble nutrients to escape into.

The vegetable is exposed to hot circulating air instead. This can help retain certain compounds that might otherwise leach into water.

But air frying is still a high-heat cooking method. Heat can damage some nutrients, especially when vegetables are cooked for long periods or at very high temperatures.

The result depends heavily on the vegetable. Less oil can certainly change the calorie and fat content of a dish. But nutrition is not determined by oil alone.

The temperature, cooking time, vegetable type, moisture and nutrient being measured all matter.

Vitamin C: Boiling tends to be harder on vitamin C because the vitamin is both heat-sensitive and water-soluble. Air frying avoids the leaching problem, but prolonged high-temperature cooking can still reduce vitamin C.

Beta-carotene: The story is less straightforward. Heat can soften plant tissues and sometimes make carotenoids more accessible. So a cooked vegetable can occasionally show better availability of certain compounds even when some of the original nutrient has been lost.

Minerals: Minerals do not simply "get destroyed" by cooking in the same way some vitamins can. However, minerals can move into cooking water. If that water is discarded, some of the mineral content is lost from the food being eaten.

This is why statements such as "raw is always healthier" or "air fried always preserves everything" do not tell the whole story.

For preserving water-soluble nutrients, air frying often has an advantage over prolonged boiling because it does not immerse the vegetable in water.

For beta-carotene and other fat-soluble plant compounds, there is no universal winner. The answer changes with the vegetable.

For minerals, boiling can cause losses when the cooking water is discarded, while air frying avoids that particular route of loss.

For overall eating quality, air frying can make vegetables more appealing to people who dislike soft, boiled textures. That matters more than it may seem. A cooking method that encourages someone to eat vegetables regularly can be more useful than a theoretically perfect method that leaves them untouched on the plate.

The most practical approach is therefore not to choose one method forever. Rotate cooking methods. Use air frying when a crisp texture makes vegetables more enjoyable. Use steaming when nutrient retention is a priority. Boil vegetables when the cooking liquid will become part of the meal.

And when boiling is the easiest option, using less water and avoiding unnecessarily long cooking can reduce nutrient losses.

The air fryer versus boiling debate can make healthy eating sound like a laboratory experiment. Everyday meals are rarely that neat.

A plate of lightly air-fried carrots, beans and cauliflower may be a better choice for one person because it replaces a fried snack. A bowl of vegetables cooked into dal or soup may be better for another because the cooking liquid is consumed.

So, air frying is often a better choice than draining away the water from heavily boiled vegetables when the goal is to limit nutrient loss. But it should not be labelled the universal winner.

The vegetable itself matters. So does the cooking temperature. So does the time. And perhaps most importantly, so does what happens after cooking.

If boiling water becomes soup, dal or gravy, much of what would otherwise be lost can stay in the meal. If air-fried vegetables become heavily browned and overcooked, the benefits of avoiding water loss do not make them nutritionally perfect.

The smartest plate is not built around one cooking appliance. It is built around eating a variety of vegetables and preparing them in different ways.
