Please be sure it is actually being removed by the CurseForge app. When I tried to do this, it said it removed it but it was still in the AddOns folder. After removing it a second time, I actually removed it. Then installing it worked without issue. Just do the "Remove Addon" rather than "Remove all addon files including variables" as you want to keep your savedvariables file.
