Congratulations to our SIFBI scientist, Dr 🌷 Aaron Thong, on winning the Best Poster Award for his work on improving umami flavour production in cultivated meat! 🏆 Cultivated pork currently contains much lower levels of certain natural compounds, such as IMP and GMP, which play an important role in creating the rich, savoury umami taste we associate with meat. Aaron and his team and collaborators explored the use of pulsed electromagnetic fields (almost like a “workout”🏋️♂️ for the cells) to stimulate their energy-producing machinery. Their early findings showed improved cell growth and increased production of these important flavour-related compounds. While more research lies ahead, this promising approach could help cultivated meat achieve a fuller, more authentic taste from within. This work reflects how SIFBI brings together food science, cell biology and bioprocessing to address real-world challenges and to create science-driven solutions for a healthier and more sustainable food future. Well done, Aaron and team, on this well-deserved recognition!
The second day of the Singapore International Food Forum (SIFF) has concluded! With that, we have reached the conclusion of the two-day forum that occurred over 3-4 August 2026. The morning started off with two informative plenary sessions by Prof Mark Turner (University of Queensland, Australia) and Prof Yonghui Li (Kansas State University), sharing on the topics of food safety & food design and the role of AI in food protein modelling, respectively. Like the first day, delegates then attended a series of keynote lectures by industry and academia experts, and students. We were especially proud to see even more of our FST graduates and students share their research across the six themes of SIFF. Congratulations to Yu Ziyi, Wei Xi KHU, Yi K., 张卓然 (Zhang Zhuoran), Dr Liu Mingxi, and Wei Hu for their excellent presentations! The buzz continued as delegates judged and discussed the wide array of posters presented over lunch. Many excellent posters were showcased, and even more ideas were exchanged over the research presented. At the end of the poster judging session, the three Best Poster Awardees were recognised for their excellent work: 🏆 Winner: 🌷 Aaron Thong (SIFBI, A*Star) 🥈 1st Runner-up: Lingyin Yu (NUS FST) 🥉 2nd Runner-up: Yuxin Liang (NUS FST) Delegates then sat in on two more plenary sessions by Prof Rickey Yada (University of Alberta, Canada) and Prof David Block (University of California, USA) on the future of food science and on methods to reduce production costs of cultivated meat production, respectively. This was followed by another exciting plenary panel discussion on innovations in food science with Prof Rickey Yada, Prof David Block, Prof Yonghui Li (Kansas State University, USA) and Prof Mark Turner (University of Queensland Australia), moderated by Prof Zhou Weibiao. The plenary panel speakers were each presented a token of appreciation afterwards for taking the time to share their insights. The forum wrapped up with a closing address by Prof Weibiao Zhou (Head of Department, NUS FST), reiterating the importance of food science in the world’s present and future, and rehashing the valuable connections and conversations that occurred over the two days. Thank you to all speakers, chairs, presenters, and delegates for making the trip down to SIFF 2026 – what amazing ideas, questions and energy you all have brought to Singapore over the past two days. We would like to also thank the co-organiser of SIFF, the Singapore Food Agency, for the collaboration.
