מקור השם

מקור שם המאכל כפי הנראה בטורקית, שכן שפות בלקניות רבות כרומנית ובולגרית כוללות מילה זו. מהן הגיעה המילה ליידיש (פּאַסטראָמע) ורוסית, והתגלגלה לארצות הברית ולשפה האנגלית על ידי המהגרים היהודים מרומניה שהביאוה עמם בסוף המאה ה-19. המילון הגסטרונומי ליידיש של ד »ר מ. שכטר והמילון האטימולוגי הרשמי לרומנית ( מגדירים שורשי מילה זו ב »בסטירמה » הטורקית (« בשר כבוש » בטורקית), ואכן קיים במזרח התיכון ובארמניה מאכל דומה הקרוי « בסטורמה ». האזכורים הראשונים של « פסטרמי » באנגלית הם אודות חנות בבעלות יהודית המוכרת את המוצר בעיר ניו יורק ב-1887.
