fix: improve mobile touch support for dnd

[zubricks]

replaces PointerSensor with MouseSensor + TouchSensor (200ms press-and-hold delay) in both modular dashboard widget drag and DraggableSortable component, so touch gestures no longer conflict with scrolling on mobile devices
