How to configure mail to send "plain text" emails

What Happened?

I do not see any options for sending plain text emails.

Steps to Reproduce

Cannot find any preferences in the mail app

Expected Behavior

option to choose/configure sending emails in plain text.

There is not currently an option for this; what's the problem you're trying to solve by sending only plaintext email?
