Recipe: Spicy Cajun Garlic Mayo


Spicy Cajun Garlic Mayo is a terrific spread or dipping sauce. Use it for appetizers or sandwiches… it adds a bit of zip.. but not too much. A must try…quick and easy recipe.


TIPS

This recipe uses my Cajun Seasoning recipe. I make up a batch and store it in an air tight jar. It’s great to season rice, chicken, fish and sauces. If you use another brand, adjust the amount to your taste since every seasoning blend is different.

I always use Hellman’s Real Mayonnaise.






Recipe: Spicy Cajun Garlic Mayo

All you need:

1 cup Hellman’s real Mayonnaise
1 tablespoon Cajun Seasoning *See Tips
1 ½ teaspoons garlic powder

All you need to do:

Mix ingredients in a small bowl.

Recipe: Russian Dressing


My Mother made Russian Dressing regularly…. Although her recipe differs slightly from the one I’ve been using in recent years.. the overall taste is very similar… I like my Russian Dressing with a little bite to it… and have added a bit of horseradish to my recipe as well as sour cream and a little pickle relish…. She always chopped hard-boiled egg into hers… I didn’t add it to this recipe.

This recipe is a slight variation to the famous Zingerman recipe… I used shallots instead of onion… I used sweet pickle relish instead of dill pickle… I used only a few drops of hot sauce and a splash of Worcestershire Sauce otherwise the recipe is pretty much the same as theirs.

TIPS

Most recipes use onion.. I use a shallot… I like the taste of shallots better.. they aren’t as strong in flavor as onions… you can use either.

I used horseradish sauce instead of straight horseradish… the sauce has a smoother flavor.. you can find it by the mustards or by the deli in the grocery store.

You can find chili sauce by the ketchup in the grocery store… I use Heinz brand.

I use Hellman’s Real Mayonnaise… I don’t recommend you use salad dressing.

I use curly parsley not Italian flat parsley for this.

This recipe is so easy and so good.. after tasting it.. you won’t buy it again.

Recipe: Russian Dressing

All you need:

1 small shallot, finely chopped
¾ cup mayonnaise
¼ cup chili sauce
1 tablespoon pickle relish
1 tablespoon chopped fresh parsley
½ teaspoon dry mustard
A few drops of Tabasco
Splash of Worcestershire sauce
1 ½ teaspoons horseradish sauce
3 tablespoons sour cream
Splash of lemon juice
½ teaspoon sugar

All you have to do:

Mix all ingredients in a bowl.

Refrigerate until serving.

Recipe: Honey Dijon Mayo


This recipe for Honey Dijon Mayo is quick and easy…. it makes a great addition to sandwiches.. adds that little extra pizzazz especially to ham.

I know you can purchase flavored mayos… but they’re so easy to make and this way you make a small amount.. just what you need… and it’s always fresh… not to mention… you control exactly what goes into it.

TIPS

I always use Hellman’s Real Mayonnaise … you can use whatever brand you prefer… but I would not recommend using Miracle Whip… the taste will change considerably.

When I make condiments I try to use quality ingredients… they really do make a difference… after all you’re trying to enhance the flavor of the food… and for the most part you don’t use much… so the quality really matters.

I hope you try this… it goes perfectly on my Chicken Cordon Bleu Sandwich!

Recipe: Honey Dijon Mayo

All you need:

3 tablespoons Hellman’s Real Mayonnaise
2 tablespoons Honey
2 tablespoons Dijon Mustard

All you need to do:

In a small bowl, combine all ingredients until smooth.

Refrigerate leftovers in an airtight container.

Recipe: Cranberry Mayo


Add a little extra flavor to your mayo this weekend when making all those sandwiches with left-over turkey… make Cranberry Mayo. Of course this recipe is also perfect with deli turkey anytime.

This is absolutely delicious as a condiment for croquettes, mashed potato or turkey croquettes.

TIPS

I like to make this with jellied cranberry sauce, but you can also make it with whole berry cranberry sauce.

I used a wire whisk to mix this … but you can also mix it in a mini chopper if you want to get it really smooth. I liked the bits of cranberry sauce throughout but whirling it in the mini chopper will make it a very pretty color.

I always use Hellman’s Mayonnaise, you can use any brand you prefer, however, I would not recommend using Miracle Whip.

Recipe: Cranberry Mayo

All you need:

¼ cup cranberry sauce
3 tablespoons mayo

All you need to do:

In a small bowl, mix the cranberry sauce and mayo well.

Refrigerate until using.

Recipe: Pecan Butter

Pecan Butter is another flavored butter that’s terrific on pancakes or toast… it’s easy to make and adds so much to foods… the finishing touch!

I’ve always used flavored butters.. and am always on the lookout for more ideas. This idea came from the Food Network… I tried their version and decided it needed more … just about more of everything… so here is my recipe for Pecan Butter.

TIPS

I always use unsalted butter… if you want salt .. you can always add it.

You need to get your butter softened… do not microwave it.. the ends will melt and the center will still be hard… just set it out and let it soften naturally.

Most flavored butters can be put into a ramekin and served like that… I prefer to make it into a small log and slice it… the easiest way to do that is to… after you’ve mixed the ingredients… dump it onto a piece of plastic wrap… use the plastic wrap to roll it into shape.. then twist the ends of the plastic wrap closed and finish shaping it.. don’t handle it too much or it will melt.

Toast your pecans before chopping…. For instructions How to Toast Pecans… see my post..

I used my mini chopper to chop the pecans.. you want them chopped finely.

Try this… it’s delicious!






Recipe: Pecan Butter

All you need:

1 stick of butter, softened
¾ teaspoon cinnamon
1 teaspoon vanilla
2 tablespoons brown sugar
2 tablespoons honey
2 tablespoons toasted finely chopped pecans

All you have to do:

Mix all the ingredients in a bowl.

Scrape the pecan butter onto a piece of plastic wrap. Wrap the butter and shape it into a log. Freeze until firm then refrigerate until ready to use.

Recipe: Cinnamon Sugar Butter


This recipe for Cinnamon Sugar Butter is a quick and easy addition to toast, muffins and fruit… but more on that in a minute.

Many months ago I discussed flavored butters and how they can enhance foods. They’re easy to make and well worth your time. They can be either savory or sweet.

Okay… about the fruit… I like to oven roast fruit… one example is peaches… a wonderful way to do it is to put some cinnamon butter on them … as the oven bakes the fruit and melts the butter… the two flavors mingle… the smell is heavenly … as is the taste.

TIPS

I always use unsalted butter… and add salt if I want it… just a pinch will do you fine.

I keep cinnamon sugar in a small jar… click here for the recipe… another quick and easy mixture. It’s tremendously cheaper to make your own instead of the pre-mixed stuff you find in the spice section of the grocery store.

So here we go….






Recipe: Cinnamon Sugar Butter

All you need:

1 stick of unsalted butter, softened
2 tablespoons cinnamon sugar
Pinch of salt (optional)

All you have to do:




Mix the butter and cinnamon sugar in a small bowl. Mix well.

Scoop into a small ramekin and refrigerate until serving.

Recipe: Quick Garlic Mayo

I previously posted a Roasted Garlic Mayo that’s really superb … but you always don’t have the roasted garlic on hand or the time to prepare it…. some sandwiches and dips just need garlic mayo… so here’s a quick recipe using garlic powder and commercially prepared mayonnaise.

TIPS

The amount of garlic powder needed will vary with personal tastes as well as age of your garlic powder… mine never lasts long in this house… we love garlic… all kinds… but if yours has been around a while it may not be as potent… so the taste test is always the best guide.

Refrigerating the garlic mayo for at least an hour will set the garlic flavor better. I stored mine in an airtight container in the fridge overnight and the next day it was wonderfully garlicy.

I always use Hellman’s Real Mayonnaise… using a different mayonnaise will, in my opinion, change the taste…

Use my amounts as a guide and alter it to your tastes. Just remember if you’re storing it for later use, the garlic flavor will get stonger.






Recipe: Quick Garlic Mayo

All you need:

¼ cup Hellman’s Real Mayonnaise
1 teaspoon garlic powder

All you need to do:

Mix mayo and garlic powder in a small bowl.

Recipe: Pesto Mayo


This quick and easy mayo is fabulous on sandwiches… I keep pesto in the fridge so this is a snap to throw together.

TIPS

You can use either a commercially made pesto or make your own… you can use my recipe for pesto… click here to see it.

I use Hellman’s Mayonnaise … using a different mayo will alter the taste. I wouldn’t recommend using Miracle Whip for this.

This is terrific on my Tuscan Chicken Sandwich… try it.. it’s so easy!






Recipe: Pesto Mayo

All you need:

½ cup Hellman’s Mayonnaise
2 heaping tablespoons prepared pesto

All you need to do:



Combine ingredients in a small bowl.. mix well.

Recipe: Garlic Mustard Butter


This little recipe for Garlic Mustard Butter is such a great add-on to other recipes… I found it at a site for recipes for pork… it’s a great addition to pork and chicken...and even beef… it’s sensational on top of a grilled steak. It’s quick and easy to make.. and I highly recommend you try it….

TIPS

The original recipe says to stir the ingredients together… I used my mini chopper and pulsed it to combine the ingredients…

Recipe: Garlic-Mustard Butter

All you need:

¼ cup butter ( ½ stick), softened
2 teaspoons Dijon mustard
1 clove garlic, minced

All you need to do:


Chop the garlic clove in a mini chopper… pulse until well minced.

Add the butter and mustard and pulse until well mixed…




Then scrape it out of the processor bowl and put it on a piece of plastic wrap… form it into a log with the plastic wrap and refrigerate it to get it semi-hard.




When ready to serve… cut it into fourths and place on the hot meat just before serving.

Recipe: Roasted Garlic Mayo

This recipe is another super easy flavored mayo that’s just wonderful. You need to Roast Garlic…. See my other post on how to Roast Garlic, if you need directions.
This is wonderful with sandwiches, vegetables (as a dip) and French fries…. I’m sure you can think of other uses too!

Recipe: Roasted Garlic Mayo

All you need:

1 cup Hellman’s Real Mayonnaise
Roasted garlic from 1 head, skin removed
Juice of ½ lemon

All you need to do:

Mash the garlic and combine with the mayonnaise and lemon juice. Cover and chill until use.

Adding Zip With Mayo

You can add zip to your foods with mayo…not just ordinary mayo…. mayo flavored with herbs, spices and many other ingredients. These mayos enhance the natural flavors of your foods….

You can zip by adding seasonings such as Italian seasoning, chipotle peppers, adobo sauce and horseradish…. For a lighter taste…lemon and tarragon are great additions. Sun-Dried tomatoes are also a tasty addition. The sky is the limit for possibilities.

There are limitless things you can add to mayo to make a more flavorful condiment …. Try experimenting with the foods you like and the seasonings and flavors that go well with those foods.

Today I’m giving you four distinctive recipes for mayonnaise….. they’re quick to make and are wonderful additions to sandwiches, burgers, grilled meats and seafood.

Recipe: Chipotle Mayo

This recipe for Chipotle Mayo is a fantastic way to dress up sandwiches, subs and burgers. It’s also fabulous in tuna or chicken salad… just use it in place of plain mayo. It’s super easy to make and requires only a few ingredients.

I use Hellman’s Mayonnaise… I think it produces the best results… you can use another brand, but I would recommend that you don’t use Miracle Whip or other salad dressings… the results are usually runny and the taste isn’t the same. Since there are few ingredients… you want them to be a good quality so you get the best result.

This mayo is a bit spicy… if you prefer foods less spicy… start with one chipotle chili and ½ tablespoon adobo sauce… and taste it… add more to your taste.

You can find chipotle chilies in adobo sauce in jars or cans in the international aisle in the supermarket.

I use my mini food processor for this… it’s perfect for whipping up a batch quickly.

Recipe: Chipotle Mayo

All you need:

½ cup Hellman’s Mayonnaise
2 cloves of garlic
3 teaspoons fresh lime juice
2 chipotle chilies in adobo sauce
1 tablespoon adobo sauce (from chipotle chili peppers)
Fresh cilantro to taste

All you need to do:

Combine all ingredients in a food processor and pulse until well blended and smooth.

Recipe: Horseradish Mayo

This recipe for Horseradish Mayo is so delicious and easy and will make a wonderful addition to many beef meals. It’s excellent on roast beef sandwiches and steak. It also goes well with crab cakes and other fried seafood. However you serve it… it will be sure to enhance your meal.

You can find prepared horseradish in the dairy or deli section of your grocery store.

Recipe: Horseradish Mayo

All you need:

½ cup mayo
2 tablespoons sour cream
3 tablespoons prepared horseradish
¼ teaspoon salt
1/8 teaspoon pepper

All you need to do:

Place all ingredients in a glass bowl and stir until all ingredients are well incorporated.

Recipe: Lemon Tarragon Mayo

This recipe for Lemon Tarragon Mayo is a terrific and quick way to enhance chicken and seafood. It adds a light refreshing taste to your dishes. .. perfect for light summer meals.

It also is wonderful on sandwiches… add this to your chicken salad instead of regular mayo and you have a new spin on chicken salad that will turn an ordinary sandwich into something special… having a lunch guest… this is a perfect idea that will be sure to impress your guest.

I use Hellman’s Mayonnaise…. It really is the best…. do not use Miracle Whip as this will change the consistency and taste of the recipe.

Recipe: Lemon Tarragon Mayo

All you need:

½ cup Hellman’s Mayonnaise
4 tablespoons sour cream
The zest of 1 lemon
2 tablespoons fresh tarragon, chopped
Salt and Pepper to taste

All you need to do:

Place all ingredients in a glass bowl and stir until all ingredients are well incorporated.

Recipe: Sun-Dried Tomato Mayo

This recipe for Sun-Dried Tomato Mayo is from a magazine I copied into my recipe box years ago… unfortunately I have no idea of the source. This is terrific on all kinds of sandwiches and subs…. It’s excellent on burgers as well.

I use Hellman’s Mayonnaise… since there are few ingredients and this ingredient will dominate the Mayo… you want to use the best ingredients. Do not use Miracle Whip as this will change the taste and texture significantly.

Recipe: Sun-Dried Tomato Mayo

All you need:

½ cup Hellman's Mayonnaise
2 teaspoons sun-dried tomatoes, minced
1 teaspoon sugar
1 teaspoon Italian seasoning
1 teaspoon lemon juice
½ teaspoon garlic powder

All you need to do:

Place all ingredients in a glass bowl and stir until well blended.

Refrigerate 30 minutes or more before using.

Coarse and Whole Grained Mustards

Tip of the day

Coarse and whole grained mustards contain whole mustard seeds and have a strong mustard and nutty flavor. They’re thicker and heartier than other types of mustard. Ask any German what mustard to put on wurst or ham… and you will likely be told a brand that is coarse and whole grained.

I’ve put together a list of a few brands that I have used…. You should try different kinds to find the one that suits your tastes the best. I also like different ones for different things…. The taste does vary widely.

Boar’s Head is my favorite for ham sandwiches…. Plochman’s and Inglehoffer is my favorite for wursts… and Grey Poupon is probably my first choice for in recipes. In any case… tastes are personal… and no one person is right or wrong… taste it and see what you prefer.
