TWD/DAC: Bran-Berry Muffins

 


 

This month's cake recipe from Dorie's Anytime Cakes by Dorie Greenspan was Bran-Berry Muffins.

These are definitely not the standard, tasteless bran muffins, but more like a tender cupcake, loaded with fresh blueberries.  The addition of honey and yogurt brings a slightly sweet and slightly tangy flavor to them as well.  Instead of bran, I used wheat germ, which added a bit of sweetness and nuttiness to the muffins.  Before baking, I sprinkled some turbinado sugar on top.

These were really delicious, and definitely worth making again.

TWD/BWD: Brioche

 


Brioche is one of my favorite doughs.  It's delicious and versatile.  Beside eating it plain or toasted, brioche can be made into rolls, buns, French toast, bread pudding, or babkas.

It's an enriched dough, containing eggs and lots of butter.  Once the dough is made, it is proofed overnight in the refrigerator.  Then, it's ready to use.

For the first September post, this is a simple brioche loaf.

 


September's second post will feature a brioche shaped into something special.
