Weekly Recipe- Crockpot Beef Stew

I thought that since it was starting to get cold I would add a recipe that would warm you up!!!

Crock Pot Beef Stew

Saute the Following:

1 lb. lean beef round- cut into cubes

1 small onion-chopped

2 c. sliced mushrooms

Place in Crockpot with the following:

2 large carrots sliced

2 garlic cloves minced

1-15oz. canned pinto beans- rinsed and drained (1/2 can regular)

Puree other 1/2 of can and add with the rest of the ingredients.

1 1/2 c. Beef broth

14.5 can Crushed tomatoes

1/2 tsp. Oregano

1/4 tsp. Thyme

1/2 tsp. Salt

1/4 tsp. Pepper

Cook 6-7 Hours.

Oh What a Day!

Let's just say that this has been a long week and it is not even over yet. On Tuesday morning at 9 am I got a call from Promenade Elementary. Telling me that KaiLee was in the office and that they thought that she had broken her arm. I quickly threw the kids in the car (it now takes a little longer with the 2 extra that I have during the day) and flew down to the school. She was in the nurses office and right when I saw her I knew that it was broken. She has a pretty high pain tolerance and she was bawling. The principal came and talked to me. She told me that a boy had pushed her down (on purpose) and she had tripped and fell. I think at that point I was more concerned about Kai and was kind of tuning her out. I did not want to go to urgent care so I called our doctor. They got her in to see Dr. Furtan (this is why I love Dr. Deterville and/or Dr Furtan) and he determined that he needed x-rays of her arm. She was a trooper through the x-rays and it was determined that she had broken the big bone in her arm right above the wrist. They put her in a soft cast for now and we are waiting for the orthopedic to call us so that she can get her permanent cast on. She has already decided that she wants light blue. She went to school the next day and did great. She is a real trooper!!! Today she seems like she is in pain a little bit more. She went to school this morning. At about 930 the office called me and told me that she was in the office. I went down and picked her up and now she is just resting in bed with Delani. So all in all it has been a crazy week.

Weekly Recipe- Lemon Blossoms

So this Recipe is from Paula Deen on the Food Network. Gregg Fry made these at a going away party that we went to. They are delicious and SUPER easy.

Lemon Blossoms

18 1/2 ounce package of Yellow Cake Mix

3 1/2 ounce package of instant Lemon Pudding Mix

4 large Eggs

3/4 C. Vegetable Oil

Glaze:

4 C. Powdered Sugar

1/3 C. Fresh Lemon Juice

1 Lemon Zested

3T. Vegetable Oil

3 T. Water

Preheat the oven to 350 degrees F.

Spray miniature muffin tins with vegetable oil cooking spray. Combine the cake mix, pudding mix, eggs and oil and blend well with electric mixer until smooth, about 2 minutes. Pour a small amount of batter, filling each muffin tin half way. Bake for 12 minutes. Turn out onto a tea towel. To make glaze, sift sugar into the mixing bowl. Add the lemon juice, zest, oil and the water. Mix with a spoon until smooth. With fingers dip the cupcakes into the glaze while they are still warm, covering the entire cupcake. Turning them to completely coated. Place on wire racks with waxed paper underneath to catch any drips. Let the glaze set thoroughly about 1 hour.

First 2 Weeks of School.

So at first I was regretting my decision to put the girls in Promenade. They had tons of friends at Orange and I was sad that they were leaving them. Boy was I WRONG!!! The girls are loving it and have made tons of new friends. It is so much nicer not having to take the freeway to get to school. It is amazing how quickly children can make friends and adapt to new environments. The girls love their teaches and are always saying how much they love Promenade. Their teachers are great and they love going to school. Back to School Night is coming up and I am excited to get to know their teachers a little better.

KaiLee's Basketball Pizza Party

KaiLee played co-ed basketball this summer. She loves the game and cannot wait until the next season. She and another little girl were the only girls on her team. She even made a couple of baskets. There team only lost 2 games (not that they keep track) She plays through the city and is hoping that Randy will coach the next season. They each got a medal and an award for playing. Her next season will be with all girls and she can hardly wait till it starts.
