Tagliatelle di nonna Graziella

Ingredienti:
• Olio EVO

• Un porro

• Carciofi
• Speck
• Radicchio

Preparazione:

Taglio il porro e lo speck a pezzetti sottili, il carciofo a listarelle sottili (con il coltello o la mandolina) e il radicchio a stricioline sottili, aiutandomi con una forbice.

Faccio soffriggere il porro, poi aggiungo i carciofi; dopo qualche minuto metto lo speck e in ultimo il radicchio. 

Faccio saltare in padella le tagliatelle aggiungendo un bel mestolo di acqua di cottura per evitare che vengano asciutte.

La nonna, prima di mettere in padella le tagliatelle, aggiunge anche un cucchiaio di panna da cucina.

E in una ricetta che le ho rubato potevo forse non inserire un consiglio della nonna Graziella?

 

 

“Ricordati Monny che quando il carciofo viene tagliato tende a diventare subito scuro. Per evitarlo, preparati una ciotola capiente con dell’acqua e del limone tagliato a spicchi, e immergi i carciofi appena li hai  tagliati."
