Friday Update- Joe

Joe was a little more awake this morning, but still is on the ventilator, so he can't speak.  They plan to put in a larger tube today.  When he is able to get all those tubes out, he will be more comfortable.  All his vital signs are really good at this time.  They won't do any more surgery before Monday.  We really do apprecaite all the prayers that have been lifted up for him.  He will be here for quite a while and will need many prayers.

Today I am so thankful that Joe is in the best Burn Center in the South!
We are all so thankful for the many prayers that have been said for Joe.

Thursday Update on Joe

This morning when we visited Joe at 9:00 A. M. we were very pleased to see that he was looking much better.  Much of the swelling has gone from his face and he is looking more normal.  In the midst of all this, we are so very thankful that his face was not damaged!!   We will be eternally grateful for that!!  He opens his eyes and know we are there, responding by nodding or shaking his head, yes or no.  We hope and pray for him to show this much progress each day.

Joe was in surgery for the from 1:30 til 5:30 Wed. afternoon.  The doctor came out and talked with us and he is pleased with his progress and thinks everything is going as well as possible. He has 63 percent of his body burned and 10 percent is 3rd degree and the rest is 2nd degree. The doctor said that he is strong and healthy and has a lot if things in his favor. It's going to be a long hard road ahead.   They do not plan to do any more surgery before Monday.

Wed. Morning Update

Joe's wife Kay, and his employer, Bruce, visited Joe this morning and the staff told them that he had a good night.  He is more swollen but they said that was normal.   His body temperature is a little low and they are warming him up a little in preparation for the surgery they have scheduled for today.  It is cold in that area and they don't want him to be too cold.   It has just been 48 hours since the accident, so there is a long way to go.  We all appreciate all the prayers and concern.  Please continue to keep him in your prayers!  Thanks!

Please Pray for My Son, Joe

This is my son, Joe Embry.  Joe works for a company that does various kinds of repair and maintenance work for factories and plants.  Today shortly after noon he was severely burned when a 30 inch pipe broke where they were working.  He was burned on his back, the back of his head and his arms and legs with hot salty water, and was air lifted to a burn center in Jackson.  Please pray for him as I know it will be a long and painful recovery.

8:30 P.M. UPDATE:  Joe is being flown from Jackson, MS to the main J M Still Burn Center in Augusta, GA tonight.  His wife is going on the flight with him.  He is heavily sedated and on a respirator but the doctors in Jackson were very optimistic about his complete recovery.  It will be a long hard road but we will just have to trust him into God's hands and hope for a fast and complete recovery!   If he needs major skin grafts, they would have to do that in GA and they just wanted to be sure he gets the best care possible.  Jeep and I will leave early in the morning!  Keep praying please ♥ ♥ ♥

A~Z Foods on Monday

N is for New York Style Cheesecake



Served plain or garnished with your favorite fruit, or topping, this is a delicious and elegant dessert.




Ingredients
15 graham crackers, crushed
2 tablespoons butter, melted

4 (8 ounce) packages cream cheese
1 1/2 cups white sugar
3/4 cup milk
4 eggs
1 cup sour cream
1 tablespoon vanilla extract
1/4 cup all-purpose flour

Directions
1.   Preheat oven to 350 degrees F (175 degrees C). Grease a 9 inch springform pan.
2.   In a medium bowl, mix graham cracker crumbs with melted butter. Press onto bottom of springform pan.
3.   In a large bowl, mix cream cheese with sugar until smooth. Blend in milk, and then mix in the eggs one at a time, mixing just enough to incorporate. Mix in sour cream, vanilla and flour until smooth. Pour filling into prepared crust.
4.   Bake in preheated oven for 1 hour. Turn the oven off, and let cake cool in oven with the door closed for 5 to 6 hours; this prevents cracking. Chill in refrigerator until serving.

Flowers and Critters


This morning when we went to the Post Office in our little village, we were pleasantly surprised to see these gorgeous Azaleas blooming around a tree.   Somehow I had never noticed them being this pretty before.

These were planted by the local Homemakers Club.

 

The red Azalea really makes the white ones POP!
Below are a few of the colorful birds I saw today.

The Goldfinch are almost sporting their summer feathers.


I think this is a House Finch.


This is the first Indigo Bunting I've spotted this year.  Guess they are just passing through :-(


This little O'Possum is dining on the bread crumbs left by the birds.  He is a real pest!

A ~Z Food on Monday

M is for Molasses Pie


Yes,  I have blogged about this before, but I like this old-fashioned pie so well, I just had to show it again!   This was my Mama's recipe from long ago.  It's like a Pecan Pie without the nuts.

Molasses Pie

1 cup Molasses
2/3 cup Butter
1 cup Sugar
2 Tablespoons Flour
4 Eggs
Dash of Salt

Mix flour and sugar together and stir into well beaten eggs.
Add Molasses and softened butter.  Mix and bake at 350 degrees until set.

Happiness is...........

A custom made Lap Steel Guitar!


The first musical instrument Jeep played for money was a Lap Steel Guitar.   This was in the early 60's.
I think he has been wanting to get another one ever since he sold his years ago.   He located a man who custom makes them in Livingston, TN.  (Betsy, maybe this is not far from you.)  Above are the different woods he had to make his selection from.   He chose the top one which is Walnut.



He sent  a picture and update to Jeep as the work progressed.


Little by little it is coming together.


Almost finished!


Ta Da!


Today (Thursday) was the day the trusty UPS man delivered it!


Happy Anniversary, Dad's Day,  Birthday and Christmas!   Well, at least Jeep looks like it's Christmas!

Now to settle down a pick a few tunes.  Note, he's still smiling!

Lazy Fishing Day

 At Oktibbeha County Lake, this man was fishing the lazy way! 



We didn't see anyone catching any fish, but I'm sure they had fun trying.


This girl is probably nursing a sun burn today, as she was showing lots of bare skin.
We liked the way this old dead tree looked in the midst of all the green ones.  It looked like it was once a mighty Oak tree.   It somehow reminded me of our own mortality.
Today I'm thankful for the renewal brought by Spring!

A-Z Food on Mondays

L is for Lemon Icebox Pie


This is Jeep's all time favorite pie!   Doesn't it look delicious!!!

LEMON ICEBOX PIE

One Graham Cracker crumb crust
One can of sweetened condensed milk, like Eagle Brand
Three egg yolks, slightly beaten, save whites for meringue
Juice of three lemons

 Add beaten egg yolks to the sweetened condensed milk, then add the lemon juice and blend well.
Pour into crumb crust and top with meringue.  Bake at 325 degrees until lightly browned.  Store in refrigerator until ready to serve.  Enjoy!
