Chocolate Chocolate Chip Cookies





Hiya peeps! As promised, here's the recipe for Chocolate Chocolate Chip Cookies I made a few weeks ago. It was basically melted chocolate with a wee bit of flour and eggs and baked to a chewy and gooey cookie!

Ingredients (Recipe is from David Lebovitz's Ready For Dessert Book)

450g bittersweet chocolate, I used Callebaut 58% cocoa buttons
60g butter
70g flour
1/2 tsp baking powder
1/4 tsp salt,I sprinkled fleur the sel
4 large eggs
350g sugar, I used 250g sugar and 100g brown sugar
1/2 tsp vanilla paste
320g bittersweet chocolate, I used Ghirardelli
100g walnuts or pecans

Method

Add chocolate and butter in a heat proof bowl, Melt them over a pot of simmering water. Remove from heat.
Whisk together flour and salt and baking powder.
In a stand mixer or using a hand mixer, whisk together the eggs, sugar, and vanilla over high speed until a ribbon is formed with the mixture. With the mixer running slowly add the melted chocolate butter mixture until well incorporated.
Then using a spatula mix the rest of the ingredients ie the choc buttons and nuts.
You can either refrigerate the batter/dough, or bake immmediately. Of course I couldn't resist, and baked immediately by dropping tablespoonfuls of the batter on silpats and baking paper. Bake at 165C about 9 minutes.

After that enjoy, enjoy and enjoy till the last piece that you could dug your hands into the cookie jar! Hihi, it was that good!

Butter Cookies

Ok, ok one last recipe that I owe a reader before i become totally submerged with my work and my baking....got an email from my CFO early this morning...and the wave is definitely coming.....

I have had tasted this kind of Butter Cookies before, but failed to achieve the result I wanted (the one that melts in your mouth) from all the Butter Cookies recipes that I have tried until I tried this from nasilemaklover. And, I think this recipe is apt as Chinese New Year is around the corner...or for all of us to make and keep (ah well not for long!) in our kitchens! Or for those of you who would like to make gifts for your Chinese friends and families!

The secret to this recipe and the buttery taste is of course the good quality butter that one uses....and I used SCS salted. Think you can chill the batter once mixed in the fridge to firm it and roll and press using cookie cutters....I just pop them in a piping bag and pipe on baking paper and drizzle some hundreds and thousands before baking....once baked, my children one container each with them munching them while playing around the house...see, how good they are!

Anyway, here goes the recipe......
Ingredients
200g butter, use good quality ones please! And I used SCS salted and it was yummeh!
50g icing sugar
150 all purpose flour
50g corn flour
Choc chip or hundreds and thousands if you wish

Method
1.Heat oven at 140C.
2.Beat butter and icing sugar until pale and light.
3.Add in all purpose flour that had been sifted with corn flour, in four additions....I folded the flour using my hands, lightly knead to incorporate the ingredients together until my hands are clean.
4. Using a piping bag and a nozzle, I piped the batter on baking paper and bake for about 20 minutes and the cookies had turned light golden colour.
5.Cool and store them away in cookie jars...or you can eat them right away!

Cerita Kueh Raya....and Resepi Biskut Samprit

In the midst of all the chaos Khadijah decided to invite her friends for iftar on Sunday, I could only offer Bombay Beryani and....

Madness...that's all I can say! With just a few days left before Syawal comes round, I am struggling with my documents in the office and my baking at home.

I cleaned the ground floor of our house last weekend, but haven't had the time to do the upstairs at all...and my laundry...the maid's room have become like a Kedai Bundle...all clothing are dumped and divided nicely between six laundry baskets....I'm ok and happy despite this chaos! If only I have a bit more time, yes a bit more time for this that and the other......

So, I have finished all the orders, minus one...hubby took a bite of one Lapis Prune, lucky it's for my Pasar Tani GF....lepas rayalah she said, gulp....nasib baik! Thanks Zira! I did a batch of Almost Famous Amos Choc Chip last night, and only managed to store half of them.....Hajar, Umar and Ibraheem chopmed on them!

Well, this year I jumped on the bandwagon like the other bakers and made cookies, on top of Kek Buah and a few Lapis Prunes! And, all this cerita about kueh raya crept in.....not my stories, but the stories about how people had to slog and burn the midnight oil before they cane provide for their families' preparation for raya.....I know this happened to hubby's cousin in Muar, it is a case of kais pagi makan pagi for her household. There is no real confinement after she gave birth, she will be up on her toes about two weeks after delivery to make kuehs! And, there have been many Ramadhan's and Syawal's that she didn't sleep during the last few days before Eid, buat ketupat thousands of them and kueh, to support her family. "Azah, kau tak shopping raya?" , I have asked....."Shopping lepas sembahyang raya"! That is when all the receivables come in!

And reflecting back on myself....I have abundance! So, when I think of her, quietly, without any complain of stress or pain or migraine, I did my chores, I baked and I found such joy doing them! And, the pictures above were the shots that I took last weekend, while baking....

I was supposed to be on leave yesterday, but I had to come in to fair a document, so, I put here first, Resepi Biskut Sampit....

2 cawan gula icing
2 cawan margarine atau butter (I used Tatura salted)
4 biji kuning telor
1 cawan tepung jagung
3 cawan tepung gandum
3 cawan tepung castard
ceri merah atau kismis

The original recipe requires using cawan kenduri dulu-dulu, you know the clear see through arcoroc cawan, i measured that with the existing flour cup, the measurement is about the same.

Panaskan ketuhar pada 150C. Ayak ketiga-tiga jenis tepung.
Pukul butter dengan gula icing sampai kembang, masukkan kuning telur, kacau sampai sebati. Masukkan campuran tepung dalam tiga bahagian, adun sehingga tidak melekat di jari, if melekat tambah tepung jagung sedikit demi sedikit. Pada saya adunan yang okay dalah yang tak melekat di jari dan amat lembut apabila ditekan menggunakn acuan samprit...otherwise biskut akan jadi keras!

Well, after all said and done, all the cookies and cakes semua beres, inshaallah, but there are still some not delivered, collected....yet!

One Sunday in Ramadhan..

It was a hectic weekend...when has it not been anyway? I had to finish baking all the cookies...the orders...but thank god for hubby, he decided to take the little ones, Ibraheem, Umar, Hajar and Muhammad to Muar and then they adjouned to Ayer Baloi. Hubby wanted to clean the house in time for Raya...

So, I was left with Yusof and Khadijah and the tepungs, telorq, butter and the oven.....Saturday I did a bit of cleaning up...cleaned the maid's room, the kitchen and the bathrooms...lega! And Sunday, it was baking session from after Sahur, breather for Zohor and Bagus, sent Khadijah and Yusof to KLCC, continued after Asar until Maghrib, adjounred for Iftar at Bad's and continued until about 1 this morning....I hope I have covered them all....NOT, Nora just texted me wanting 15 bottles of Samprit....I have to turn down, time is not on my side.....

I have friends asking for recipes of  Samprit and Butter Cookies and Kek Buah....tak sempat for now...I am also scrambling my energy for documents to be released before Raya...so it's chaotic here in the office and at home...but I like...when the goings get tough...I become tougher....

And back in Ayer Baloi, our first Passion Fruit, Markisa, hopefully it would be ripe and still there next week when we go back for Raya! We got the seeds from the Gerai Nenas that we usually got our pineapples.....Ayer Baloi is pure bliss....
