Got Ramen?

I was asked to help the young men in our ward prepare for college/mission life, so we are having a ramen noodle night.  These are just some of the recipes that I have either come up with or found while surfing the web.  I hope someone else finds them useful, or at the most gets a good chuckle out of them. (some of the recipes are a bit out there)

Got Ramen?

Ramen Stir-fry
·        2 boneless, skinless chicken Breast (can use steak if you are feeling rich and fancy), cut into bite size pieces
·        1 bag frozen veggie stir-fry
·        3-4 pkgs. Oriental Ramen noodles
·        2 Tbls. Vegetable oil
·        soy sauce

Heat oil in wok/fry pan, add meat, sprinkle 1-2 pkgs. Of seasoning over and cook through.  While meat is cooking start a pot of water to boil for noodles.  Once meat is cooked add in vegetables, constantly stirring to prevent sticking (add a little more oil if you need).  Place noodles in boiling water and cook just until softened, 1-2 minutes.  Drain noodles and add to meat/vegetable mixture.  Sprinkle remaining seasoning over everything and toss together.  Enjoy!

Cheesy Ramen
·        1 pkg. ramen noodles (any flavor)
·        ¼ - ½ c. shredded cheddar cheese
·        a splash of milk

Cook noodles according to pkg. direction.  Drain of all liquid and return to pan.  Add cheese and a splash of milk and stir until melted.  *save seasoning packet and use in place of Bullion in recipes, or sprinkle over a roast before cooking.

Ramen Alfredo
·        4 0z. cream cheese, cubed
·        ½ c. shredded Parmesan cheese
·        ¼ c. butter
·        ¼ c. milk
·        2-4 pkgs. Ramen, any flavor
·        Chicken or shrimp, cooked (optional)

Cook ramen according to pkg. direction (saving the seasoning pkg. for later use), drain.  In separate pan stir together cream cheese, parmesan cheese, butter and milk over low heat until smooth.  Add cooked noodles and toss lightly.  Serve with additional parmesan cheese, and chicken/shrimp if desired.

Spaghetti style Ramen
·        4 pkg. ramen noodles, any flavor
·        1 jar of your favorite spaghetti sauce

Cook ramen according to Pkg. direction (saving the seasoning pkg. for later use), drain.  Return noodles to pot and add spaghetti sauce, toss to coat.  Heat through.  *for a more hearty meal you can brown some hamburger and add it as well, or meatballs.

Tex-mex ramen
·        1 lb. ground beef
·        1 pkg. taco seasoning
·        4 pkg. ramen noodles (any flavor)
·        cheese
·        crushed Dorito chips
·        lettuce, tomato, cheese, olives, green onion (optional)

Cook noodles according to pkg. direction, drain off liquid. (save seasoning for later use)  Brown ground beef, stir in taco seasoning and noodles.  Place in serving dish and top with cheese, chips and any other desired toppings.

Chinese chicken salad
·       1/2 head cabbage, shredded
·       1 sm. Pkg. sliced almonds
·       2 c. chopped chicken, cooked
·       1 can mandarin oranges
·       2 green onions, chopped
·       2 Tbsp. sesame seeds
·       1 pkg. ramen noodles, chicken flavor

Mix all but noodles together in a large bowl.

Dressing:
·       1/2 c. vegetable oil
·       2 Tbsp. sugar
·       2 tbsp. vinegar
·       1 tsp. salt
·       ¼ tsp. pepper
·       seasoning from ramen noodles

whisk together dressing ingredients, pour over salad.  Just before serving, crush ramen noodles and toss in.

Ramen noodle breakfast burritos
·       1 pkg. ramen noodles, any flavor
·       1 egg, beaten
·       ½ c. shredded cheese
·       2 flour tortillas
·       hot sauce (optional)

add noodles and egg to boiling water, cook for 3 minutes.  Drain off most of the water and stir in cheese and hot sauce.  Serve in  warmed flour tortillas.

Ramen chex mix
·        2 pkgs. Ramen noodles, uncooked and broken
·        2 c. chex cereal
·        1 c. pretzels
·        1 c. peanuts
·        1 c. butter, melted
·        1 tsp. season salt
·        1 tbsp. Worcestershire sauce

In a large bowl mix together the broken noodles, cereal, pretzels and peanuts.  In a microwave safe bowl melt butter and stir in season salt Worcestershire sauce.  Spread evenly onto a baking sheet and bake at 250* for 1 hr., stirring every 15 minutes.  Cool and serve.

Chocolate ramen noodles
·        1 pkg. ramen noodles, any flavor
·        ¼ c. brown sugar
·        ½  tsp. vanilla
·        ¼  c. chocolate syrup
·        whip cream

Boil noodles in 2 cups of water and brown sugar.  Pour off most of the water and then stir in the vanilla and chocolate syrup.  Pour onto serving plate and garnish with whipped cream.  Wash down with a tall glass of milk. *if you don’t have chocolate sauce you can substitute melted chocolate chips.  You can also use caramel sauce instead of chocolate.

Jailhouse Ramen Pizza
3-4 - Ramen soups (spicy or beef)
1 - Squeeze Cheese
1 - Can Chili (no beans)
1 - Summer Sausage
Couple handfuls of corn chips
Couple jalapenos
Open all noodles and place inside some type plastic bag (lg. corn chip bag works great). Add corn chips and crush mix thoroughly (don’t leave any large chunks), then add the seasoning packs. Then bring some water to boil in your hotpot. While your water heats up go ahead and slice up your jalapenos and summer sausage. Once the water is hot enough, pour into your bag with the noodle/chip/seasoning mix. Important: add just enough water to come up just below top of mix (don’t drown them).Refill pot and heat can of chill in it. Knead and work the bag with noodles in it ,mixing thoroughly. Once this is done, lay bag out and flatten down evenly, making dough/crust. If you’ve done this correctly there shouldn’t be a lot of water running out, if there is add more crushed chips and mix until thickens. Fold end of bag, secure with paper clip, and wrap with towel to insulate and let “cook” for about 10 mins. Once done cut bag down middle and bottom and spread open. Noodles  should remain in a rectangular shape and be stuck together (like dough). Pour your chili over top and spread evenly (if too runny add a few crushed corn chips to thicken mix. Then add a layer of squeeze cheese, topped with summer sausage and jalapenos. Slice evenly and enjoy with your cell mates. Yum.

Other ramen tips:
·        add some frozen mixed veggies to your regular noodle soup.
·        Heat a small amount of oil in fry pan and add broken, dry noodles.  Fry just until golden brown.  Use in salads or even as an ice cream topping.
·        Use extra seasoning packets in recipes were bullion is called for or to season a roast before cooking.
·        Use the beef seasoning as an auju sauce for French dip sandwiches.

Christmas 2012

*shocking that I actually had a camera to document this*

Max actually really liked Santa this year.  He sat on his lap more than once this night.  He asked for a train and cars. (The two loves of his life!)

A few weeks before Christmas we went to Leavenworth.  They really get into decorating and celebrating Christmas there.

Christmas Morning!
Santa brought Max Chuggington!!!  He is in love!
This is probably my favorite picture of the day (opening some more Chuggington)
He was really into being a "moe noe cycle" man
Happy Christmas Family!
Max got lots of different dress ups from Grandma Woozie and Papa.

Uncle Taylor teaching Max how to duck hunt.
Christmas kisses for Grandma Woozie!
All worn out from the days festivities!
