Since EVERYONE else is ....

I might as well be PREGNANT too!!! We are expecting baby #3 on October 23, 2010!! We are all super excited but this was a total shock! I had an appointment with my OB to change birth controls and well... he confirmed that I was pregnant and no birth control was needed for a while. Needless to say I was in shock but in a good way.... really a GREAT way:) What a blessing, I love surprises and this is the best one yet.
Cooper keeps asking me if we can stretch my belly button so he can see the baby and Clara is absolutly clueless that another baby is on the way... we tell her and she will kiss my belly but then she rubs hers and wants me to kiss her belly too. SOOO CUTE!!
I really feel blessed to have 2 happy, healthy, crazy kids and cant wait to add another!! Im not going to lie though... I am way nervous about having 3 kids! I can hardly handle 2 some days... what the heck is 3 going to be like:) Another adventure :)
YAY BABIES!!!

Chocolate Mousse!!!

One of the Recipes I made for Jeds Birthday was yummy easy chocolate mousse... not sure where I originally got the recipe but it is sooo rich and sooo easy to make! a Chocolate lovers dream:)

You will need a blender, measuring cups/ spoons,
1 egg (fresh is best)
1 cup semi- sweet chocolate chips
4 tbsp butter (softened)
1 tbsp vanilla
1 cup heavy cream.

put egg, chocolate chips, butter and vanilla in blender.
blend of medium speed for 30-45 seconds.
while that is blending put heavy cream in a microwave safe bowl in microwave and heat cream until warmed though out... not too hot to touch but warm enough to melt the chocolate... like 45 seconds (that how long it took in my microwave).
while blender is still going take that little center of the top off and pour cream in slowly let blend until creamy... another 30 seconds-ish:)
pour into small cute glasses ( i made 4 but it was so rich i think you could divide it into 6 cups and get away with that:))
let set in your fridge for 2 hours and serve...
we added redi whip to ours and some cocoa powder to make it pretty....

Birthdays!!!

Jed turned 27 this year!! For his birthday I made him a yummy dinner! Homemade french onion soup, a yummy pasta dish and homemade chocolate mouse! It was delicious, if i do say so myself:) I will post the recipies on here tonight... we had some family over and just enjoyed the wonderful company. Happy Birthday Babe!!!

Cooper just turned 4!!! We had a whole birthday weekend... that kid is spoiled rotten! But i love him and really it's our fault he is sooo spoiled.

FRIDAY-We had a fun little lunch with his buddies (Brox & Sienna Holbrook, Ashlyn & Brooklyn Read and Sophie Mason) we ate pizza, played games and sang Happy Birthday and ate cake and ice cream!! It was sooo cute and really fun for him and his buddies.

SATURDAY (Coopers actual birthday) we had chocolate chip pancakes, opened our gifts to him, played all day, took a long nap, went to dinner at Cool Hand Lukes (super yummy BTW) and then went to WAHOOZ!! It was super fun and lets just say cooper was on a hot streek for winning tickets... we should have taken him to Vegas... we could have been rich!! Oh well.... he had a great time:)

Then last but not least....

SUNDAY the Davis family has 4 birthdays this month so we celebrated them all at our house! We had a yummy cake, ice cream and homemade cinnamon rolls (thanks to Amanda) ... opened gifts ... watched the game... enjoyed the night!!

Needless to say... we have too many desserts in the house and need to regroup from all the excitment. We are all truly blessed for all the great family and friends that made this weekend so special! Thank you all!!! Pictures will be posted later tonight too...

Thanksgiving

We had a beautiful day!! Very busy as usual, any holiday is. We had our traditional brunch at my parents house and watched the Macy's Parade. Jed thinks its dumb but I have watched since I can remember. Pancakes and quiche:) YUMMY!!! My dad is sooo funny he hates the name quiche... too wimpey... so we call them "man eggs".

We then went to my Uncle Bill and Aunt Connie's home. My FAVORITE!!! I love going over there. She is a wonderful cook and great hostess ... I only hope that someday I will be able to host and cook as well as she does!!! Seriously good!!!

After we headed to the Davis house where I love just as much. We had dessert and great conversation. I love spending time with that side of the family!!! We really had a great time. Cooper LOVES playing with his "friends." And Clara loves ALL the attention from the adults (she is still the youngest cousin ... and totally takes in all the attention).

All in all it was a BEAUTIFUL day!!

I am very thankful for my family and friends. I feel soooo blessed to have such wonderful people in my life and am most thankful for being a wife and mommy:)
