Goli Baje

Ingredients:-
---------------
Maida  - 2 Cups
Curd                        - 1/2 cup
Green chilly            -  2-3[as per your taste]
  Hing                      - a pinch
Curry leaves           -  5 to 6
Cooking Soda         -  a pinch
Sugar                      - 1 Table spoon
Salt                         -  as required
Oil                          -  for deep frying (1 Cup)



Method:-
----------
1. Add maida, sugar and salt in a big bowl. 
2. Add curd and mix it nicely (let it be thick)and then keep aside to rest   for 10 minutes. 
3. Wash Green chilly and curry leaves and chop it finely and set aside.
4.  Add green chilly, hing and curry leaves and mix it well. 
5. Pre heat the oil for deep frying. (on medium flame). 
6. Just before frying add a pinch of cooking soda and mix it well. 
7. Take a handful of batter and leave it in oil so as to form  small balls shape. 
8.  Fry on both sides till they turn golden color .
9. Remove and place  it on a kitchen towel/tissue to remove extra oil. 
10.Repeat the same with the rest of the batter. 
11. Serve Hot Goli baje with ketch up or any kind of  coconut chutney you prepared.

Eggless choclate cake - using Microwave

This is simple yet a tasty fluffy choco- cake recipe for those busy mom's out there. Simple less ingredients are used and it just takes around 5 mins to prepare. So without any delay here are the ingredients used.














Ingredients:-
----------------
Maida - 1.5 cups
Sugar  - 1 cup

 Milk   - 1 cup+ 1tbsp

Cocoa powder - 3tbsp
Baking powder - 1/2 tsp
Baking soda     - 1/4 tsp
Salt                   - 1 pinch
Oil                    - 3 tsp ( optional)
Lemon juice     - 1 tsp
Instant coffee powder- 1 tsp
Water               - 2 tbsp

Method:-
-------------
1. Sieve all the dry ingredients and keep aside.
2. Squeeze fresh lemon juice and keep ready.Prepare a microwave dish by placing a wax paper at the bottom and grease the dish with butter or oil and keep ready.
3.Now in a large bowl add sugar and milk and beat until all of the sugar is dissolved completely.
4. Now add the dry ingredients little by little and blend it to gather by using a beater.
5.Now add the oil and mix properly . The mixture will be silky and smooth. Now add water and lemon juice and mix it quickly and immediately transfer the mixture to the baking dish and place in the microwave.
6. Cook for about 3-5 min depending on the power of your microwave.
7. Check by poking the bamboo tooth prick at the center .If it comes out clear .its ready.
8. Remove and allow it to cool for 5-10 mins .
9.Its ready to be relished.

Stuffed bread rolls


Ingredients:-
-------------
7-8 bread slices[remove the edges]
2-3 large- boiled mashed  potatoes
1 tbsp   -  chopped fresh mint leaves
1/2 cup - frozen thawed peas
1 large  - onion chopped
1/2 tsp -  ginger garlic paste
1 tsp    -  garam masala
1/4 tsp - turmeric powder
1/4 tsp - chilly powder
salt       -  as per taste
1/2 tsp  - cumin seeds[jeera]
1/4 tsp  - chat powder
1-2 tsp  - oil/butter/ghee for toasting

Method:-
---------
1.In a deep nonstick pan
 take 1tsp oil ,add cumin and afetr a min add chopped onions,ginger garlic paste and saute for 1-2 mins . Then add peas and add turmeric powder,chilly powder, garam masala powder and mix properly.
2. In a bowl take the boiled mashed potato and then add the above mixture add  chat powder and salt and mix properly. Now add chopped mint leaves and keep aside.
3.. Wet both hands and then tap the bread so as to make it slightly moist. Put the potato mixture about a spoon full in the centre and then slowly roll with wet hands and seal the edges properly.
4. Take a non stick pan. To it add a little bit of oil or ghee and slowly roast the bread roll on all sides so that it crunches out. Do remember to keep the flame in medium.
5. Enjoy hot with desired chutney or simple ketchup.

Vegetarian Hot dog with vegetarian sausages



Ingredients:-
-----------
potatoes                                   - 2  medium sized                 
 
Carrots                                    - 1 large

Beetroot                                 -  1 medium size

hotdog buns                            -  4-5

Day old bread / only crust       -  heaped 1 cup [ 4-5 sclices]

Bell peppers                          - 1 small

Onions                                  -  1/2 cup chopped

Garlic                                    - 3-4 cloves

red chilles                            - 2-3

Garam masala                        -   1tsp

Chilly powder                         -    1 tsp

Turmeric                                -    1/2 tsp

Salt                                       - as per taste

Jeera                                     -  1 tsp

Coriander seeds                     -  1tsp

Soya flour                              -  1/2 cup

Wheat flour                           -  1 cups

Oil                                         -  2tbsp

Method:-
----------
1. Wash and peal potatoes,carrots and beets . Slice then to thin stripes and steam cook ,keep aside for cooling.





2. In a pan  take about a tsp of oil,then when it becomes hot add jeera . When the jeera starts to splutter add onions ,ginger, garlic,coriander seeds keep mixing  for about 2 mins till the raw smell goes off.

3. Now  using a blender or food processor   blend the vegetables, with the small chunks of bread and the above onion mixture to a chunky paste. 

4. To the above paste add the 2 flours , enough salt, dry masala and make a soft dough without adding water.

5. Grease  the vessel in which you want to steam these dougs properly. Take a big lime sized ball of the dough and shape them in sausage shapes and place slowly in the greases vessel and steam cook till done.it will take about 8-10 minutes to get cooked properly. It will change in color and when you stick in a knife it should come out clear.








6. Allow it to cool and then in a non stick pan add a few drops of oil and saute these sausage about 3 at a time till the outer surface becomes a bit charred and crusty.



7. Take a hot dog  bun and smear with butter totally optional . Then place the sausage . It can be topped with onions and bell peppers or picked cucumbers or just tomato sauce and mustard and enjoyed when its hot.....


8.You can make this sausage ahead of time and freeze it. It can also be used in many more dishes or yummy recipes like fried rice singapore style or in north indian curries  which will be my future post. so do not forget to make in large quantity as it will be a time saver  for your next dishes

Note:-[ tips]
1. If you don't have fresh bread you can use old bread kept in freezer. i save the bread crust in freezer and use them as bread crumps or as a binding agent in cutlet, hara bara kabaab etc.even here i have used just the bread edges and end slices.. one more use for the wasted edges in bread sandwiches so dont forget to save them.

2. If you dont have soya flour you can use only wheat or maida. You can even use only soya flour . In all the ways it will taste great. But just adjust the flour to form a shape able mass.











Savory fingers




Ingredients:-
---------------
Rice flour              - 1 cup
Gram flour             - 1 /2 cup
Wheat flour            - 1/4 cup
Sesame seed s     -   1.5 tbsp
Salt                       - as per taste
Cumin seeds         - 1 tbsp
Green chillies         - 2  / as per taste
Onion                   - 1 medium finely chopped
Curry leaves         - 12 large finely chopped
Turmeric powder  - 1/2 tsp
Red chilly powder  - 1/2 tsp
Hing                      - 1/4 tsp
water                     -  to form a soft dough
Oil                         - for frying

Method:-
---------
1. Take a large bowl . Add all the dry ingredients .to this add chilly powder,turmeric,jeera,hing,i salt and mix properly with the hands.

2. Now finely chop onion green chillies and curry leaves and add it to the above dry ingredients.






3 . Now to the mixture add water little by little and form a firm non sticky dough  .

4. Make small balls and roll it into stick form by rolling in between your greased palm.









5. In a plate sprinkle some sesame seeds and roll over it the finger shaped sticks what we have prepared.
Then once again roll between your palms to secure the seeds into the dough. continue this process with the remaining dough and keep ready.







6. Now heat the oil for frying. slowly fry 10-12 finger sticks at a time till they turn golden in color.

7. Remove the fried stick to a tray lined with paper napkin. This will absorb the excess oil.

8. Once cooled store in an air tight  container.
 Enjoy with a hot cup of tea or coffee on a rainy day.....

zukini balls

I had a pack of whole wheat pancake mix in my pantry and dint know what to do with it so thought of making something different and heathy out of it. I have a son who is almost 3 yrs now. He is kind of a picky eater. He does'nt like Zukini where as me and my hubby just love them. SO thought to prepare these.They came out so good that even my lil one count resist he ate up 6-7 at a strech without any fuss and any type of squash is good as you all know. The best part it its not even deep fried . Its good as an evening tea snack too.




Ingredients:
----------

whole wheat pan cake mix - 1.5 cups

grated Zukini / squash - 1 whole zukini

salt - as per taste

water as per the box - i used 1.25 cups

dill seeds[omam seeds] - 2 pinches

cumin seeds - 2 pinches

sambar powder - 1 tsp

paprika powder - 1/2 tsp

olive oil - 2 tbsp


Method:
-------
1. Grate 1 whole zukini with the peal and keep ready.

2. In a large bowl mix all the dry ingredients add salt and mix properly.

3. Now add zukini grates to the dry ingredients and mix it .Now slowly add water and mix till it reaches idli batter consistancy.

4.Keeping the heat in medium flame grease the gulli appam pan with ghee or olive oil.I have used olive oil here.

5. Now fill the holes of the pan up till 3/4th and then cover and cook for about 1-2 mins .

6. Now pour about a drop of olive oil on each holes with the dough and reverse and cook for another 1-2 mins till its perfectly done.

7. Remove and repeat the process again. Can be served with tomato ketchup or coriander chutney on the side for dipping. Enjoy when its hot.

Chakkuli



This is very famous snack to much on in south India. Looks great and can be store for 2-3 weeks in an airtight container.Very easy to prepare.

Ingredients:-
-----------
Rice powder - 3 cups
Urad dal - 1.25 cups
Butter - 1 stick [3-4 tsp]
salt - as per taste
Cumin seeds - 2 tsp
water - to mix
Oil - for deep frying



Method:-
-------
1.First in a pan dry roast the urad Dal until it turns brown .It should not be too dark.It will start releasing nice smell thus you will know.
2.Keep it aside.Then allow it to cool down.Then powder it to a smooth powder and keep ready.
3.Now melt a stick of butter and take in a bowl.to this add powdered urad dal,salt,cumin seeds,rice powder and prepare a soft dough adding enough water.This should be dry .so add water little by little.
4.Now fill it into the machine or a pastry bag and make chakkuli over wax paper or normal paper and keep ready
5.Preheat the oil and when the temperature is appropriate drop this chakkuli one by one and fry till they turn brown and crisp.
6.Enjoy when its hot.It tastes good even after cooling.
7.Store it in airtight container only after its cooled down completely.

Jat-Pat Chakkuli



This is a simplest recipe which anyone can prepare. Some times we all feel lazy to prepare but wanna have some nice snack to munch . So this was one day for me so thought of trying this instant chakkuli what i call it.Its a recipe with minimal ingredients but taste is simply superb.It will last for atleast 2-3 weekd when stored in an airtight container.

Ingredients:-
----------
Rice flour - 1 cup
Besan - 1/2 cup
Butter - 1 tbsp
Salt - as per taste
Cumin - 1 tsp
Black til - 1/2 tsp
Oil - for deep fry




Method:-
--------
1.Take all the dry ingredients in a bowl.Melt Then butter and add it to the dry ingredients.
2.Add salt ,cumin and til.
3.Add little water and mix into a soft dough almost like chapathi dought.It should not stick to your hands.
4.In a small pan heat up the oil.
5.in a greased sheet using icing syringe press some chakkuli's in circular fashion like jelebi's and keep ready.
6.Fry them till golden brown on both sides In medium heat.
7.Remove from oil and place them over paper towel to drain off execess oil.
8.Store in an air tight container.
9.You can also add finely chopped onions and curry leaves and then press the chakkuli's.the just taste awesome.

Oven Baked Samosa



Samosa are my hubby's altime favorite.He loves them so much that he can eat them at anytime of day.But as they are deep fried i always try to avoid them.So i thought of trying them in a different way avoiding deep fry i.e baking and to my surprise it came out very good.So i thought of sharing it with you all....

Ingredients:-
----------
All purpose flour - 2 cups
Margarine - 2 tbsp
salt - 1 tsp
Water

For the stuffing:-
--------------
Potatoes - 2 large
Carrots - 2
Peas - 1 cup
Onion - 1 large
Beans - 1/2 cup
Green chillies - 1 large [Optional]
Turmeric powder -1/4 tsp
garam masala - 1/2 tsp
Kitchen king masala-1/2 tsp
Cumin - 1 tsp
Oil - 1tsp



Method:-
-------
1.Take flour,salt and 1/2 tbsp of margarine and add water and make a dough out of it just like chapathi and keep aside.Melt the remaing margarine and keep ready.
2.Then roll out into square chapathi's.Then grease it with melted margarine on the inner surface ,then fold it into half then again grease the inner side touching the margarine with your fingers.Then again fold it and roll ou into a sheet just like how you do for ghee parata's.These are the base for your samosa's.
3.Now for the stuffing cook all the vegetables in microwave.
4.Take a pan , add cumin and 1 tsp oil.Allow cumins to splutter then add onions and saute till they turn golden brown.
5.Then add all the veggies,season with salt,and the masala powder sprinkle with little water and mix all of them together.
6.Now cut the rolled out dough into small squares of about 3 inch lenght.
7.Roll out a cone fill the stuffing and seal the edges like a pie using the fork tooth.
8.Bake in a pre-heated oven of 350deg F for 20-30 mins until done.
9.Keep checking and rotating the sides of the samosa.
10.Enjoy with coriander chutney or tomato sauce.Healthy,tasty and crisphot samosa's are ready.

Crispy Quesadilla


This is a simple recipe for a busy day.Yummy veggies blended in a spicy tomato base and cheese added as a topping and baked to a crunchy yummy Quesadilla...I and my hubby enjoy the Mexican food a lot.So bought some corn tortilla's and kept in my freezer to quench our crave for mexican food .These corn tortilla's are the best way of hidding some veggies in a form of stuffing to fill the cranky kids stomach with nutritional veggies.Corn is very healthy and contains a lot of fibres , vitamins and minerals.

Ingredients:
----------
Tomatoes-1 large
Corn Kernnels- 1 cup
Capsicum - 1 small
Black Bean -1/2 cup well cooked
Cellery - 1 leaf
Olives- 5-6
Jalapaneo-1 large
Olive oil-1 tsp
Onion-1/4 cup
Barbeque sauce-1 tsp
Salt
Sambal-oelek-1 tsp
Tomato paste- 1 tsp
Corn tortilla-2-4



Method:-
--------
1.Take a pan add olive oil
2.Then add onions and fry them till they turn transparent.
3.Then add tomato paste , barbeque sauce,samba sauce,salt and mix properly , add all the veggies and cover and cook for 1-2 mins untill they turn tender and soft.
4..Then take a corn tortilla and add this stuffing in one side ,top it with a little bit of cheese on the top and cover by folding and grill it or bake it in a tava for 2 mins till the cheese starts to melt and the tortilla's turn crisp.Enjoy when hot....

Jeeguje Podi


Hey friends as i promised im back with one more recipe out of bread fruit. So here i am withYummy crispy crunchy best for a cold weather or weekend munchies too.Some thimes i feel its ok to forget you diet balance and just relish a wonderful munchies like this....
Its cripsy yet creamy and soft inside...Hmm just irresistable.....

Ingredients:
-----------
Bread fruit slices- 15-20 thinly sliced slices
Besan- 1/4 cup
Rice powder-1/4 cup
Rava- 1/4 cup
Corn flour- 2tsp
Chilly powder-3 tsp
Hing- 1/4 tsp
Cumin-1 tsp
Oil - for deep fry
Salt

Method:-
-------
1.Take all the dry ingredients in a bowl, add 2 tsp of heated oil .This oil helps to prevent the pakoda from absorbing more of oil and makes the pakoda taste good.
2.Mix all the dry ingredients and make a batter adding enough water.
3.Take a pan and heta up the oil.
4.Dip the thin slices of bread fruit in the batter and deep fry them till they turn crisp and nice.
5.Remove them from oil and place over the paper towel to remove excess of oil.Serve hot with tomato sauce.



The same batter can be used to prepare any other pakoda's.I had madesome cauliflower pakoda's too just have alook at those too.....Enjoy.

Vegetable Pie




This is a quick easy recipe of a veggie puffed pie which is crispy,crunchy,spicy and yummy.........Its the best finger food.Good for party time....a easy holiday food.I assure you friends you will not be disappointed.....It give the same taste as a deep fried dish.The same way you can prepare smaosa's also.SO this will be a best way to eat the same tasty food without deep fry.

Ingredients:
____________
All purpose flour-1.5 cup
Oil - 2 tsp
Sugar - 1/2 tsp
Salt -1/2 tsp
Yeast -1/2 tsp
Garlic powder -1/2 tsp
Water

Stuffing:
_______
Cooked potatoes-1/2 cup
Cooked carrots -1/2 cup
beans - 1/4 cup
Broccoli -1/4 cup
Onion -1/4 cup
Peas - 1/4 cup
Oil -1 tsp
Cumin - 1 tsp
Chilly powder - 1tsp
Turmeric - 1/4 tsp
Garam masala - 1/2 tsp





Method:
________
1.Prepare a dough using flour, yeast ,salt ,sugar,water and oil[1 tsp]
2.Now cover it with a wet cloth and keep it in warm place to rise up to double the original size.About 45 mins.
3.For stuffings ,take a pan add 1 tsp oil to it add cumin seeds.just when it splutters add chopped onions and saute till it turns slightly golden brown.
4.Just when the onions are done add all the veggies ,1 cup water ,add all the masalas with salt as per taste .
5.Cover and cook for 3 mins,just till all the water has evaporated.
6.Now make small balls out of the dough and roll it into tiny chapathis.
7.Then add the stuffing about 2 big spoon on 1 side,coat the entire edge with oil , close it using the other side and seal it and compress it using the fork edges for fancy look [It also cive a proper seal to the pie].Grease the surface with few drops of oil.
8.Preheat the oven , bake in a 350 deg oven for 5 mins and then turn and bake other side for 3 mins.
9.Pie's are ready to be served hot with tomato Sauce.Enjoy..
