For the pancake lovers and haters


If you hate pancakes like I do, I suggest taking a look at this recipe.


I avoid pancakes as much as possible, I have never liked how fluffy and thick they were. But these are soo good. I make a batch for myself and eat almost all of them. Super easy and quick. 
Is anyone willing to help me re-do my blog? I have no clue how to do all the fancy revamping so I use the classic pic-monkey. I will love you forever.

College is quickly creeping up on me, and to be honest I wish it would come quicker. I am so beyond exited to start this new chapter. I'm dying to meet my roommates and to start my classes. Although with college does come the moving to another state. Moving so far away from family is going to be a huge trial for me, not being able to go home and see my parents after a hard day at school, or just having the comfort of knowing that home is so close is going to be hard for me. I know that going to this college is going to be a huge blessing in my life and will help me grow so much. 
As much as I am loving life right now, I am dying to see what lies ahead in the next few months.

Recipe Wednesday

As an incoming college freshman, learning to cook has been one of my major priorities. Although I have been slacking on the whole make one meal a week deal with my mom, I have made a few. So I thought I would share with you guys, who may or may not need some new recipes. 

Okay first off, I am in no ways a lettuce fan, salad is a twice a year occasion, and the only way I'll eat it is on sandwiches/hamburgers. But this is way good. It would be a perfect side dish or nights like tonight when you just want something quick and easy for your meal. It really only took me 15min to make. So simple. 

PF CHANG’S CHICKEN LETTUCE WRAPS

A copycat recipe that you can easily make right at home in just 20 minutes. And it tastes a million times better too!
INGREDIENTS
  • 1 tablespoon olive oil
  • 1 pound ground chicken
  • 2 cloves garlic, minced
  • 1 onion, diced
  • 1/4 cup hoisin sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice wine vinegar
  • 1 tablespoons freshly grated ginger
  • 1 teaspoon Sriracha, or more, to taste
  • 1 (8-ounce) can whole water chestnuts, drained and diced
  • 2 green onions, thinly sliced
  • Kosher salt and freshly ground black pepper, to taste
  • 1 head butter lettuce
INSTRUCTIONS
  • Heat olive oil in a saucepan over medium high heat. Add ground chicken and cook until browned, about 3-5 minutes, making sure to crumble the chicken as it cooks; drain excess fat.
  • Stir in garlic, onion, hoisin sauce, soy sauce, rice wine vinegar, ginger and Sriracha until onions have become translucent, about 1-2 minutes. Stir in chestnuts and green onions until tender, about 1-2 minutes; season with salt and pepper, to taste.
  • To serve, spoon several tablespoons of the chicken mixture into the center of a lettuce leaf, taco-style.

Not the end, but the beginning

High School. 
A big chapter of my life that was just closed. 
With one chapter closed is space for a new one to take it's place. 
As we all go our separate ways, some of us will never see each other again. 
We all are starting a new chapter. 
A new chapter I am welcoming with open arms. 
Leaving the life I have known for almost 19 years of my life and heading onto a New Beginning.

Restart

Supposed to be doing homework instead went through my whole blog.
Drafted my whole blog.
Except one post. Because that week meant the world to me, and strengthened me more than you know.
So here is to turning a new page.

July 15-20

Lets just say the best week of my life.
 I have never been so spiritually enlightened like was that week. The spirit was so strong all week. Prayers were continually answered and life long friends were made.
 I will never forget those experiences, those people, that feeling. The feeling of peace, comfort, love and knowing who I am and that Heavenly Father knows me.
I know that I was put into that company for a reason, for their kind spirits to change my life, for their words to be answers to prayers, and to know that they will always be there for me even if we are miles apart.
I know my counselors weren't just by coincidence. They were there for a reason. My amazing counselor Jayden(aka mama J), always knew the right words to say and when to say them.
Gospel study where every question I once had was answered through the scriptures, it truly was so amazing to watch the prayers be answered one by one.
Nightly personal prayers, where Jayden would come and pray with us and listen to our personal prayer and when we finished she would say a prayer for us, she would say things only I would know meant everything to me.
The girls who got put as my roommates. Became some of my closet friends, even though they live in a different state they are still so dear to me.
The lesson I learned about not being so quick to judge and to love everyone no matter what, it was a clear smack to the face and I heard the words clear as day telling me what I needed to change in my life, and in changing mine, touched someone else's life.
 
Because of that week, I now know who I am and what I am supposed to do. I know that I am supposed to go serve the lord for 18 months.
I know that my Heavenly Father loves me and watches over me, he hears my prayers and he answers them. I know he his always there and he never leaves.
I know the church is true. Without a doubt in my mind.
 I love this gospel. With all my heart.
 
Efy 2013 truly changed my life.
