Kiwi Cake

Kiwi Cake



  • 1.5 cup flour
  • 2/3 cup sugar
  • 1.5 tsp baking powder
  • 3 eggs
  • 1/4 stick butter
  • 2 kiwis, pureed and strained.
  • 1 drop green food coloring
1) Puree and strain 2 peeled kiwis
2) combine dry ingredients. Mix in eggs, melted butter, food coloring.
3) Put in a 9x13 pan in a 350 oven for 20 minutes.

Overall: So this is what happens when I'm bored at home. The idea started when I wanted to make strawberry cupcakes . Then I realized we have a LOT of kiwi's that need to be eaten. Strawberry + Kiwi = YUMMY. So then it turned into kiwi cupcakes with strawberry frosting. I'm not sure why I switched to a 9x13 pan, but these probably would have been better as cupcakes.

While the cupcakes were baking, I went to make the strawberry frosting which was an EPIC FAIL. Not sure why, it just was.

But the cake was alright, I would add more kiwi to the mixture. My cake was a little on the dense side but I might have used the bread flour instead of the all purpose flour because nothing is labeled here. But I would love to play more with these flavors :) So I just added a bit of chocolate frosting on top of mine for kicks.

Chocolate Chili Cookies

Chocolate Chili Cookies

Ingredients
  • 1 cup flour
  • 1 egg
  • 1/2 cup melted butter
  • 1/3 cup sugar
  • 1/4 cup coco
  • 1/4 cup brown sugar
  • 3/4 tsp baking soda
  • 1/2 tsp vanilla
  • 1/4 tsp salt
  • 1/2 tsp chili powder
1. Combine dry ingredient in bowl.
2. Add butter & chocolate chips make sure butter is cooled so it doesn't melt the chocolate
3. Bake in a 300 degree oven for 14 minutes.

OVERALL: So these were suppose to be chocolate chip cookies. Then one ingredient led to another and before you know it, these babies were born. These were so freaking good. I brought them to my study group the following day and were gone within 10 minutes of me getting there. The only thing I would do differently is play with the amount of chili powder, maybe adding some more because you couldn't taste it. But over all these were wonderful

Caprese Chicken Rollatini

Caprese Chicken Rollatini

For the Chicken Rollatini:
  • 2 chicken breasts
  • 2 tbsp pesto sauce
  • A few slices of Mozzarella cheese
  • Balsamic Vinegar
  • cooking twine.

Directions:

1. You need to pound the chicken to about 1/8-1/4 thickness. The best way to do this either a)wrap your butting board in plastic wrap. Place one chicken breast in the center. Cover the chicken with an additional piece. or B) place chicken in a gallon sized ziploc bag and zip up. To evenly pound the chicken, start from the center of the chicken and work your way out. Repeat for 2nd breast.*note- if you are using a ziploc bag this can be tricky when the chicken becomes too big for the bag.

2. Take the tbsp of pesto sauce and spread on the chicken.

3. Add a slice of the mozzarella cheese. If you are slicing cheese by hand, try to make it as thin as possible. Don't add too much or it becomes impossible to roll.

4. Tie with cooking twine.

Chicken should look like this. I added too much cheese so it was coming out.

5. Put both chicken breasts on a baking sheet lined with tin foil (I sprayed with Pam for good measure). In a 350 degree oven let the chicken cook for about 40-45 minutes.

6. When ready to serve garnish with Bruschetta and a drizzle of Balsamic vinegar.

OVERALL: For my first attempt in a while at making an original dish I was really happy with this one. Originally I wanted to add the tomato into the rollatini as well, but decided that I'm not a fan of warm tomatoes.

My chicken was not thin enough. I spent probably 30 minutes pounding chicken with a frying pan (I don't have a meat pounder) while my roommate was watching T.V. So I probably should have gone a bit longer on both. My other mistake was using fresh Buffalo mozzarella cheese. When I checked up on the chicken, most of the cheese had melted out because it's like 80% water. I would used a sturdier mozzarella for this or perhaps skips the cheese in the middle and add it ontop halfway through cooking.

Also, the bruschetta was very good! It will probably be my go to recipe.

I was very happy with this meal and I'll keep working on perfecting it.
