Pickled Eggs

I know this may sound strange, but one of my favorite snacks is a couple of pickled eggs and a glass of lemonade. I don't see how it could possibly be a healthy snack, with sugar and salt added, but it's delicious and very easy to make at home.

They are fairly common in Massachusetts, but here in Connecticut, they are a bit harder to find. Well! After looking for months (years?) I was at the Big E in 2010 and found a recipe and sample! I was so happy to finally have a recipe for a snack that I loved and could only have every once in awhile. I could have purchased the entire jar, but that was way too much money. One day, I tried the recipe that I was given at the Big E (if anyone is close to New England and wants to go with us, we'd love the company! It's a great regional fair. I'm looking at you, Quinn Family!) and it was perfect.

Here is the recipe that I received from the Massachusetts building at the Big E, with a modification. I hope you are adventurous one day and try these eggs. They are delicious! Let me know if you are adventurous enough to try them. I have given these to people to try and everyone has raved about them.

Pickled Eggs Recipe:

2 cups white vinegar
2 Tbsp. sugar
1 medium onion, sliced (I DON'T USE THIS!)
1 tsp. salt
1 tsp. mixed pickling spices (VERY important!)
12 hard-cooked eggs, pealed

Simmer all ingredients except eggs in saucepan for 10 minutes. Put eggs in jar and cover with hot mixture. Refrigerate for several hours. They are best after pickling for two or more days. Onions are traditional, but I don't use them for this recipe.
