Greens with Fruits and Nuts

Salads are a delight in the summer with the high temperature and humidity.  It nice to change them around by adding ingredients, you might not expect to find.  I have been putting strawberries into salads for years but not blueberries.  I admit, I hesitated, not knowing if they would be accepted.  They turned out to be a wonderful addition to the salad. Greens with Fruits and Nuts Ingredients: 8 ounces mixed greens of choice 1/2 cup strawberries 3/4 cup blueberries 2 tablespoons chopped pecans 1/2 cup slivered almonds Dressing - 1 1/2 tablespoons olive oil 1 1/2 tablespoons apple cider vinegar 2 tablespoons lemon juice 1/2 teaspoon honey 1/4 teaspoon sea salt 1/4 teaspoon fresh ground pepper Method: In a bowl, place all makings of salad except dressing. Blueberry Chicken with Crispy Bread Crumbs

This week, Peggy has chosen  Blueberry Chicken with Crispy Bread Crumbs   found on page 155 in Weeknight Wonders.  Each recipe brings me closer to Ellie and her wonderful recipes. Blueberries don't make for a good photo compared to peaches and peaches and New York don't go together well, in the winter.  Most of us are waiting for the warm weather and the peaches .  We had a lovely warm day and it is back to below freezing. I made this a few weeks ago since this is a super busy time of the year with Passover coming in a few short weeks and so much to do in preparation.  I hate to say, I don't remember too much about it other than we liked the chicken, but this is the case.  I am not sure if the blueberries were a good substitution . Too Easy Blueberry Muffins - Donna Hay

This week, was my turn to pick a recipe for our Donna Hay group, Wednesdays with Donna Hay.  My husband loves blueberry muffins and with the title of Too Easy Blueberry Muffins, how could I resist, making this my selection. In all honesty, I am not sure how this is easier than other blueberry muffins.  Sometimes, I add nutmeg to mine or nuts but generally, any kind of muffin takes little effort to make.  As Donna proclaimed, this also was a simple recipe. Today is a Jewish fast day preceding the holiday of Purim so I have not tasted the muffins but they look good enough to eat and I plan to have one when the fast is over. Blueberry Sour Cream Cake

I wanted to make this, last week, but I had no sour cream so I made up for it by making it, this week.  There certainly is no problem finding good blueberry recipes but this  site  is filled with a bunch of winners.  It is called Blueberry Recipe. com.  They even discuss growing blueberries and recipes for kids.  It is worth a look if you like blueberries. Blueberry Sour Cream Cake  ( adapted) Ingredients: 1/2 cup oil minus 1 tablespoon 1 cup sugar 3 eggs 2 cups gluten-freeflour 1/2 teaspoon salt 1 teaspoon baking powder 1 teaspoon baking soda 1 cup sour cream 1 teaspoon vanilla 2 cups blueberries, fresh or frozen 1/2 cup brown sugar Method: Preheat oven to 325 degrees. Grease and flour 9x13x2 inch pan.  Put oil and sugar into mixing bowl. Add eggs, one at a time, beating well after each addition.  Mix dry ingredients and add gradually to the egg mixture alternately with sour cream, ending with flour. Stir in vanilla...

Blueberry, Oat and Yogurt Muffins

Margaret has a new fan - my husband.  She selected this week's recipe for our WWDH, Wednesday with Donna hay group.  Hubby took a bite and I thought I had better hide the rest of these muffins.  He liked the texture and flavor.  He has never mentioned texture before.  So, kudos to Margaret and Donna Hay. This recipe is found on online right here. We are a known "muffin family" and I am always ready to bake muffins but I don't always get such accolades.  I think the combination of the oats, yogurt and blueberries gave it the extra boost.  I do recommend this recipe.  It is not only good but easy to make.  I used one bowl and it is measuring, mixing and baking --- nothing complicated. I made these gluten-free by subbing in a mixture of tapioca flour, brown rice flour and potato starch.  (could have added guar gum). SRC - Blueberry Coffee Cake

This month, I needed a Hubby friendly cake for you know who and I found this one on my designated blogger for the Secret Recipe Club. Suzanne, a beloved blogger, who we all know through her hard work in the Club has the blog, I was to cook from.  Suzanne was participating in a surprise online party for Shelby and she made this delicious cake below with raspberries.  I had blueberries so I changed the recipe slightly and made this with blueberries.  I also made it gluten-free so hubby could eat it.  He loved it. Blueberry Cornmeal Pancakes

My favorite dinners are what usually pass for breakfasts, eggs, pancakes, French toast, muffins and coffee cake.  OK, I don't make coffee cake for dinner. The other night was what I call, a tired night.  A tired night for me, usually means, it is a challenge to boil eggs.  All I want to do, is climb into bed and close my eyes, even just for a half an hour.  A tired night means, even if I get that nap in, I don't want to cook.  Cooking time has passed and I want to move on.  I could go without eating but hubby couldn't.  In all fairness to him, when I feel this way, he either offers to bring in dinner or to make pasta and cheese (this is not mac and cheese, as we know it). I, get pleasure out of cooking for my husband so I try to avoid these situations.  Pancakes seem to be the easiest, other than eggs, to make quickly and quietly.  With pancakes, you can get away with the easiest recipe and put some fruit or syrup on top, and it is goo...

What do you do when you have leftover blueberries and cantaloupe?  My answer would be, make a fruit salad.  That sounded like a wonderful idea so I did a search for cantaloupe recipes.  Why, I did not search for a cantaloupe fruit salad is beyond me.  Cantaloupe recipes brought all kinds of interesting combinations for a variety of different presentations. The minute, I saw cantaloupe cake, I knew what I was doing.  I am sure, this leaves you, scratching your head.  Is it just me, or have you heard or eaten a cantaloupe baked good?  If not, it is time to try something new. Blueberry Mango Salad

I meant to take a picture when we brought in the Costco order, huge crates of mangoes and strawberries.  Strawberries are usually no problem to use up quickly. Mangoes, I am learning about, as we use them up.  Fortunately for me, there are many mango dishes being shown on the Internet.  I spent about ten minutes, browsing for ideas and then thought about where I needed the mangoes used and what else I had on hand. Dinner had been pretty much cooked, using some of the mangoes, but dessert and salad were still waiting to be filled.  In the hot weather, dessert is not much in demand and I decided to let it go.  Salad, on the other hand was very much desired so I figured out the perfect one.  I can't take credit for this, not can I give credit.  I am sure, it came to mind, because of the different recipes, I had looked at. Almond Blueberry Loaf

This cake was made under fire.  The Sabbath was upon us and I had about an hour to go and this cake baked for that long.  I have never worked this fast but speed produced a light and subtle tasting cake that we enjoyed. Blueberry Loaf Cake  (ever so slightly adapted)  Ingredients 1/2 cup Canola oil 1 cup sugar 2 eggs 1/2 cup Rice milk 1 teaspoon vanilla extract 1-3/4 cups all-purpose flour  (I used a gluten-free mix.) 1 teaspoon baking powder 1 cup fresh or frozen blueberries Topping: 2 teaspoons sugar 1 teaspoon ground cinnamon Method: In a large bowl, cream butter and sugar until light and fluffy. Beat in the eggs, milk and vanilla. Combine flour and baking powder; add to creamed mixture just until combined. Gently fold in blueberries. Pour into a greased 9-in. x 5-in. loaf pan. Combine sugar and cinnamon; sprinkle over top.  Bake at 350° for 50-55 minutes or until a toothpick inserted near the center comes out clean.  Cool for 10 ...
