Spaghetti with Roasted Veggies & Garlic.
I love spaghetti... and I've been trying to concoct the perfect recipe for a while now. And I think I've got it. The trick is in the roasted garlic. Yum. It obviously doesn't have to be exact - especially if I came up with it.
1 red pepper, seeded & chunked
1 yellow pepper, seeded & chunked
1 orange pepper, seeded & chunked
1 green pepper, seeded & chunked
2 handfuls cremini mushrooms, chunked
1 squash, chunked
1 zucchini, chunked
1 bulb of garlic
1 - 14 oz. tomato sauce, no salt added
1 teaspoon oregano
1 teaspoon basil
1 teaspoon thyme
1 teaspoon fennel seed
salt to taste
whole wheat thin spaghetti
Preheat oven to 375*. Cut the top off the bulb of garlic, spray with evoo cooking spray and sprinkle with salt and ground pepper. Wrap in foil and put in the oven, roast for 20-30 minutes.
Cut up the rest of the veggies and put on 1 or 2 baking sheets. Spray and sprinkle with salt and pepper. Roast for 15-20 minutes.
Put water onto boil for the pasta. Cook according to package directions.
Put the tomato sauce in a pot over warm heat. When the veggies are done roasting, add them along with the seasonings. Salt to taste - remember you salted the veggies before roasting them. Get all of the roasted garlic cloves out of the bulb and smash them into a paste on a cutting board with a fork. Add to the pot. Let the flavors combine for 10 or so minutes... then chow down.
I also do this in a crockpot. You've got to do the roasted garlic separately... otherwise just put it all in the crock pot and cook on low for 4-6 hours.
Serve over whole wheat thin spaghetti noodles. Yum. It's even better the next day.

Rollover Jerk Chicken with Roasted Vegetables and Pineapple
3 red onions, roughly chopped and divided
4 cloves garlic
1 bunch scallions
Juice of 2 limes
2 jalapeño or serrano peppers, seeded
2 to 3 tablespoons red wine vinegar
1/4 to 1/2 cup orange juice
1 tablespoon (about a palmful) sweet paprika
1 tablespoon (about a palmful) cumin
2 teaspoons (about 2/3 palmful) allspice
1 teaspoon (about 1/3 palmful) cinnamon
6 sprigs fresh thyme
1/3 to 1/2 cup EVOO - Extra Virgin Olive Oil, plus some for drizzling
4 boneless/skinless chicken breasts
Salt and freshly ground black pepper
1 pineapple, peeled, cored and cut into chunks
1 yellow bell pepper
2 red bell peppers
1 green bell pepper
Preheat oven to 400°F.
Place one red onion, the garlic, scallions, lime juice, jalapeño peppers, red wine vinegar, orange juice, paprika, cumin, allspice, cinnamon and thyme in a food processor and pulse to combine. While running, stream in the EVOO to form a thick paste.
Place the chicken in a roasting pan and season generously with salt and pepper. Rub the paste on the chicken and place in the oven to cook. About 25 minutes.
Place the pineapple, bell peppers and 2 red onions on a baking tray. Season with salt and pepper and drizzle them with some EVOO. Place tray in the oven with chicken.
I serve over brown rice. The 'paste' make more then I need for my family, so I freeze the leftover to use again. This last time I made it I put the chicken in the crockpot, with the peppers and onions on top, then poured the paste over the top. Cooked 3+ hours on high during church. Then I added the pineapple to the crockpot, shredded the chicken and served it all over brown rice. It was super easy and pretty good crock-potted. Although I prefer the roasted ones.

Chicken Fajita Soup
2 tablespoons extra-virgin olive oil
2 packages chicken tenders, 1 1/2 to 2 pounds
1 tablespoon coriander, a palm full
2 tablespoons chopped fresh thyme leaves, 5 to 6 sprigs
Salt and freshly ground black pepper
1 large onion, quartered and thinly sliced
1 large bell pepper, quartered and thinly sliced
1 jalapeno, seeded and thinly sliced
1 (28-ounce) can fire roasted diced tomatoes
1 quart chicken stock
1 bag white corn tortilla chips
1 cup shredded pepper Jack or sharp white Cheddar
1 ripe avocado, diced
1 lime, juiced
4 scallions, chopped
Handful fresh cilantro leaves or fresh flat-leaf parsley, chopped
Heat a large skillet with extra-virgin olive oil, 2 turns of the pan, over medium-high heat. Add chicken, begin to brown 4 minutes, add coriander, thyme, salt and pepper, to taste, onions, bell pepper and jalapeno, season with salt and pepper, to taste. Cook 8 to 10 minutes, stirring frequently. Add tomatoes and stock, heat through.
While the soup is working, lightly crush some tortilla chips and divide among 4 bowls. You need a couple of handfuls per bowl. Top the chips with a little cheese. Toss the avocado with lime juice. Top the chips with ladles of soup. Garnish soup with avocado, scallions and cilantro or parsley.

Autumn Harvest Chili
I love, love this vegetarian meal. Ava & Corynn too. Nolan & Shayne will eat it, but don't roll their eyes up in the back of their head like Ava and I. It's super healthy. Serving it in half of the butternut squash is totally cute presentation too. Although this was a HUGE butternut squash...
2 cups vegetable stock
1 large or 2 small dried ancho cili peppers, stems and seeds removed 2 small butternut squash, halved lengthwise, seeded
4 tablespoons EVOO - Extra Virgin Olive OIl
Salt and black pepper
1/2 pound crimini mushrooms, quartered
1 medium onion, chopped
2 cloves garlic, finely chopped or grated
1 medium red bell pepper, seeded and chopped
2 small zucchini, diced 1/2 inch
1 teaspoon dried marjoram or oregano, 1/3 palmful
1 scant tablespoon smoked sweet paprika, a light palmful
2 1/2 to 3 tablespoons chili powder, a couple of rounded palmfuls
1 10-ounce box frozen corn or 2 ears of corn, kernels scraped
1 14-ounce can black beans, drained
3 tablespoons tomato paste
1 cup Negra Modela or other beer of choice {i omit, add more veggie broth}
1 healthy tablespoon honey
2 cups shredded yellow cheddar cheese {i omit for a vegan meal - and never used that much!}
Preheat oven to 425ºF.
Place butternut squash cut side up on a baking sheet and drizzle with about 2 tablespoons EVOO and some salt and pepper. Roast squash in oven until tender, about 45 minutes. When they've finished roasting, turn off the oven and turn on the broiler.
While the squash is in the oven, place a medium saucepan over medium-high heat with 3 turns of the pan of EVOO, about 3 tablespoons. Add the mushrooms and brown 5 minutes alone, then add onion, garlic, peppers and zucchini to the pan, season with salt and pepper and cook until the veggies are tender, about 8-10 minutes more. Puree softened ancho chili peppers in food processor or blender with vegetable stock. {I add all the other veggies into the food processor... my kids are way more likely to eat things if they don't know what's in them}
Add the spices, corn, black beans and tomato paste to the pan and cook until heated through, 1-2 minutes. Add the beer to the pan, stir then add ancho stock {and veggies} then simmer over low heat until ready to serve.
Scoop the finished chili over the butternut squash halves and sprinkle with the cheese. Place the squash under the broiler to melt the cheese then serve.

Sloppy Veg-Head Joes.
This is from Rachael Ray's Big Orange Book that I got for Mother's Day... this is the first recipe I've tried and it's yummy! I made whole wheat hamburger buns with it {good buns, but use half the salt - they were way too salty for us}. Made it nice and cheap being meatless and with homemade buns and all... and when you borrow the yeast from your neighbor, it makes 'em even cheaper! ;) thanks Dude
1 T. canola or vegetable oil
2 jalapeno peppers, seeded and finely chopped
1 red, green, or yellow bell pepper, seeded and chopped
1 red onion, chopped
2 large garlic cloves, chopped
1 (21-ounce) can black beans, drained and rinsed
1 t. ground cumin
1 t. ground coriander
salt and pepper
1 (15-ounce) can diced fire-roasted or chunky-style crushed tomatoes
1 rounded T. brown sugar
1 T. Worcestershire sauce (see Note below) or vinegar of any kind
1 lime
4 crusty rolls, split and lightly toasted
A handful of fresh cilantro leaves, chopped
Heat the oil in a skillet over medium-high heat. To the hot oil, add the jalapenos, bell peppers, onions, and garlic and cook until tender, 7 to 8 minutes.
Fold in the black beans, cumin, and coriander and season to taste with salt and pepper.
Stir in the tomatoes, brown sugar, and Worcestershire or vinegar and simmer the mixture for a few minutes to combine the flavors.
Squeeze the lime juice into the pan and stir. Serve the joe mixture on buns with cilantro to top.
SERVES 4
NOTE Worcestershire sauce contains everything but the kitchen sink, including anchovies. I love it, but if you follow a strict vegetarian diet you might prefer to substitute vinegar.

Orzo Stuffed Peppers
1 lb. italian sausage {I added this}
1 (28-ounce) can Italian tomatoes
2 zucchini, grated
1/2 cup chopped fresh mint leaves {i omitted, i save mint for my gum & desserts}
1/2 cup grated Pecorino Romano, plus more for sprinkling
1/4 cup extra-virgin olive oil
3 cloves garlic, minced
1 teaspoon salt
1 teaspoon freshly ground black pepper
4 cups chicken broth
1/2 cups orzo (rice-shaped pasta)
6 sweet bell peppers (red or yellow)
Preheat the oven to 400 degrees F.
{Cook sausage.} Pour the tomatoes into a large bowl and break apart using a pair of kitchen shears or your finger tips. Add the zucchini, mint, cheese, olive oil, garlic, salt, and pepper. Stir to combine.
Meanwhile, bring the chicken broth to a boil in a medium saucepan over high heat. Add the orzo and cook for 4 minutes. The orzo should be only partially cooked. Use a fine mesh sieve to transfer the orzo to the large bowl with the other vegetables. Stir the orzo into the vegetable mix to combine. Transfer the warm chicken broth to a 3-quart baking dish.
Slice the tops off the peppers and remove all ribs and seeds. Cut a very thin slice from the base to help the peppers stand up. Place the peppers in the baking dish with the warm chicken broth. Spoon the orzo mixture into the peppers. Cover the dish with foil and bake for 45 minutes. Remove the foil, sprinkle the top of each pepper with cheese and continue baking until the cheese is golden, about 15 minutes. Remove from the oven, carefully transfer the orzo stuffed pepper to a serving plate.

Crock Pot Pork Tenderloin
I got this recipe from a ward cookbook my sister in law gave me from Houston. It was super easy, and tastes pretty good... but the best part - completely ready and waiting for you when you get home from church at 5pm!
4 lb. pork tenderloin
package fajita seasoning mix
ground pepper
2 red peppers, sliced
large onion, sliced in rings
2 garlic cloves, minced
8 medium or 4 small red potatoes, cut into bit size pieces
large zip lock bag
Put all ingredients into Ziploc bag, mix... then add the pork. Dump contents into a Pam sprayed crockpot and put 1/4 to 1/2 cup water in the bottom. Cover and cook on LOW for 6 to 8 hours. The longer, the more tender the tenderloin.
It was good for how fast and easy it is! And for sure works when you want dinner as soon as you get home!!
